Recipe Ingredients for Homemade Cabbage Rolls

2 head cabbage
1 1/2 cup rice, uncooked
8 bacon, slices
2 onion, medium
3 clove garlic
1/2 cup sweet red pepper
1 1/2 tsp marjoram
1/2 tsp thyme
1 1/2 lb extra lean ground beef
1/2 cup fresh parsley, chopped
3/4 tsp salt
1/2 tsp pepper
796 ml sauerkraut, rinsed and drained
3 tbsp brown sugar, packed
1 liter tomato juice

Recipe Directions for Homemade Cabbage Rolls

  1. Using sharp knife core the heads of cabbage. Blanche the cored cabbages one at a time in a large pot of boiling water for 5 - 8 minutes until leaves begin to soften. Remove and chill in cold water to be able to remove outer leaves. Set leaves aside. When you get to leaves that are not yet softened, return cabbage head to boiling water and repeat process.

  2. Meanwhile cook rice in water, according to directions on rice package.

  3. Cook bacon in skillet until crisp. Then chop the cooked bacon and set aside. Drain fat from the skillet.

  4. Cook ground beef, onion, garlic, red pepper, and seasonings together in the skillet.

  5. When rice is cooked to your satisfaction (I cook rice completely, many recipes call for parboiling rice so it completes cooking after it's in the rolls) add it to beef mixture. Add finely chopped parsley. Mix well.

  6. Prepare the rolls by spooning about 1/4 cup filling into one cabbage leaf, folding the sides over and rolling it up.

  7. Line a 6 L roasting pan or dutch oven with 1/3 sauerkraut and 1/3 brown sugar. Top with a layer of rolls seam down; cover another 1/3 of sauerkraut and brown sugar. Repeat with remaining rolls, sauerkraut and sugar.

  8. Pour tomato juice over all the rolls. Top with a few remaining leaves of cabbage to prevent scorching. Cover and bake in 350 deg F (180 deg C) oven for 1 1/2 hours. Uncover and bake another 1/2 hours or until rolls are tender. Discard top leaves.
