Lean ground beef can be substituted with ground turkey. The enchilada sauce and picante is your choice, mild, medium or hot. This recipe is great for a large crowd.

Recipe Ingredients for Homemade Enchilladas

5 pounds lean ground beef
28 oz enchilada sauce(2 large cans)
26 oz Soup Cream of Mushroom (1 family size can)
8 cups low fat motzerella cheese (shredded)
8 cups low fat cheddar cheese (shredded)
16 oz Pace picante sauce (1 jar)
60 oz Flour Burrito Size Tortillas (3 packs of 8)

Recipe Directions for Homemade Enchilladas

  1. Fry hamburger. Drain off the excess grease. Add enchilada sauce, cream of mushroom and picante sauce to the hamburger. Cook over medium heat until all is hot.

  2. Spray cake pans with a non-stick cooking spray. Lay out one burrito shell. Spoon in about 4 tbsp of meat mixture. top with both cheeses. Roll. Continue this process until about 18 shells are made. Top the rolls with the remaining sauce mix. Top with remaining cheese. Olives make a nice add to the top. Bake in the oven at 350 degrees until cheese is melted. You may need two spatchula to get them out of the pan. I cut them in half down the middle. Top with sour cream if you like.
