that sounds really really good. i am addicted to medjools. wish i had a $1 for every food processor i have given away....maye a blender would work?

The peanuts have to be chopped very fine. I think a processor is needed. Try it out though!

I tried these homemade larabars before. They didn't stick at all.

It doesn't hurt to try a blender. Of course blender quality varies quite a bit (e.g. a high end bartender/smoothie blender would probably do this in its sleep :) ).

I was surprised to see Lara bars graded as a B-, while 'other' food bars, with rice syrup as the first ingredient, were rated as an A. I know, it does not take into account where the sugars come from - but I can't eat the stuff with the syrup in them - too sweet & too high GI, it makes me sick!

A B- sounds about right for the nutritional rating of a Lara Bar.  It's a good-for-you food with a decent amount of nutrients but not something that should be a major component of your diet.  (i.e.  It's a snack food.)  The other bars are overgraded because the CC system focuses heavily on vitamins/minerals and the other bars are supplemented like crazy.  They should probably get something like a B- or C+ not an A.

 That's why I hate the CC food grade system =P
