i have recently begun making my own soups. they are SO low in sodium, calories, carbs etc and are VERY filling AND sooo simple to make.
here is what i have been eating for lunch the last couple of days:
-tomato basil soup: tomatoes, onions, celery, carrots, garlic, peppers. sweat out the veg in a tiny bit of veg oil, then cover with stock and hand blend with fresh herbs!
-mixed veg soup: tomato, onion, celery, carrots, garlic, broccoli.sweat out the veg in a tiny bit of veg oil, then cover with stock and hand blend with fresh herbs!
I remove some stock before blending if I want a thicker soup. Its so delish!!
I bet its got barely 100 cals per entire pot of soup.
I eat with a few rice crackers dipped in, or a tbsp of light sour cream.
Next I am going to make beet soup! MMMM.

106 calories for a two bowl serving! A great base to expand from with a variety of herbs and other veges.
Soup is one of my favorite things and I don't care how hot it is. There is no season for soup!
