Honey Molasses Harvest Cookies (50 cal/cookie!)

I just wanted to share (ok, brag about) the recipe I just made up! LOL it's based off my favourite recipe for oatmeal cookies but with substitutes for all the "bad" ingredients. :)

Completely whole-wheat, sugar free, 50 calories per cookie. What more could you ask for?

1/2 cup honey 1/2 cup molasses 1 egg 1 tsp vanilla 1 tsp cinnamon 1/2 tsp nutmeg 1/8 tsp cloves 1 pinch salt 1 1/2 cups oats 1/2 cup whole wheat flour 1/8 cup whole wheat flour 1/2 tsp baking soda 1 small apple 1/2 cup raisins 1 tbsp butter

Directions

  1. Put butter in a small bowl. Finely chop the apple and add to the butter. Microwave for 30-45 seconds until butter is melted and apple is slightly softened. Stir to coat apple.

  2. Add egg, vanilla, honey, and molasses. Set aside.

  3. In large bowl, combine oats, flour, baking soda, cinnamon, nutmeg, cloves, and salt (you can change the proportions to suit your taste, even add some ginger if you want to!). Add raisins and then pour in the liquid ingredients.

  4. Bake in 200 celcius/180 fan/something around 375 F oven for 10 minutes. This recipe works best with small cookies - if you make 3 1/2 dozen (ok, 44) they will be 50 cal cookies!

  5. Also, if you make these in yorkshire pudding tins (the really tiny or half muffin tins) they will be more like soft cakes and look very pretty! mmm...

Nevermind, there's something broken.  I put a post in CC Plus about it.

You have whole wheat flour listed twice, once as 1/2 cup, and again as 1/8 cup.

These look really good and I want to try them, but want to make sure I have the right ingrediants lol.  I don't think I have any apples in the house so I might try applesause instead.  Also, I don't like cloves, but might try the ginger instead! :)

mmm, these sound great!  I'll do without the cloves but wow, I'll make these for Christmas!  Thanks for posting!

it randomly inserts a space, so just check for spaces, delete the space, and hit enter again.

So, I'm confused......did you MEAN to list whole wheat flour twice, both with seperate amounts?  You never replied to my last post about this and I don't want to overdo the flour.

Hi sorry, yes, I did mean to list it twice because if I listed it once it would be some weird fraction of a cup. =)

 

They're not that small-- depends on what you consider a reasonable cookie size to be.  If you bake these on a sheet they spread out somewhat, so would be about 2" diameter from a dropped rounded teaspoonful of dough.  The ones I did in the yorkshire tins rose up a bit and were like little brownie bite sized.

Thanks for the reply - I made these and they were a big heavy on the molasses, but still very yummy.  I think next time I'll cut the molasses by half, and maybe try making it in a pan, and cutting them into squares.  They're thick, chewy, and a bit sticky, so I think they'll make good energy bars. :)
