Hi all, My husband is graduating with his bachelor's degree and I am hosting a barbeque for family and friends. 

I am definitely going to have hamburgers and hotdogs for the folks that whine about helathy but I am also going to make some grilled chicken breasts with a decent fat free marinade.  My real problem comes to sides.  What can I make besides the high fat or high sugar dishes such as potato salad and baked beans.  I want to have healthy food that everybody can enjoy.  Any suggestions would be great!

fruit salad, veggies, a jello made w/ cool whip mixed in before it's completely jello-fied hehe, ruffles light potato chips (75 cals per 15 chips instead of 160 cals), baked potato bar
veggie kabobs! throw onions, zucchini, squash, tomatoes, corn, peppers, etc. on a skewer, and grill them right along with your chicken and burgers.
Veggie trays!!!  I LOVE veggie trays... lol...

You can make a healthier form of pasta salad by using whole wheat penne, minced bell peppers & onions (or shallots) and either lite miracle whip (or one of the lower cal mayos out there) or a smidgen of olive oil with Italian seasonings.

Grilled sweet potatoes are pretty good.

Grilled fruit skewers are good (pineapple chunks, fresh orange segments and fresh cherry halves).

Corn on the cob is of course traditional (though may be hard to find at a reasonable price this time of year).

A nice big veggie salad is always nice.


The grilled veggie kabobs and fruit kabobs sound yummy.  I was going to suggest grilled zucchini, grilled asparagus and grilled sweet potato strips.  Cole slaw can also be healthy depending on the dressing you use.  Congrats to your husband!  Have a fun party!
If you go to edible arrangements - they have this awesome strawberry boquet.... i would just copy it yourself instead of paying the $42 for it. take a plant vase, put in a head of lettuce, cover it with that dark green garnish and throw the strawberries on sekwers. its really healthy and cute! definately an conversation starter.

o i forgot about this yummy pasta salad i make all the time. get corkscew noodles and cook em, rinse em in cold water. then add in tomatoes, onions, olives, cucumber, any ohter yummy things you want, and top w/ low fat italian dressing. omg its osooo good.
I know this is late but I wanted to thank everyone for their suggestions.  We had the barbeque this last weekend and it was wonderful! 

I had grilled chicken breasts and had the local butcher make patties for us from extra lean beef.  I did a fruit salad, veggie tray and green salad along with a pasta salad with low cal italian dressing and a bean salad that didn't have all of the sugar of normal baked beans.  Also had baked chips instead of fried.  Thanks again everyone for your suggestions.
I just had a barbecue this weekend and was in charge of all the sides.  We had veggie kabobs with mushrooms, peppers, and onions brushed with just a bit of olive oil and placed on the grill.  We also grilled up asparagus similarly.  I made a tasty salsa with tortilla chips.  We also had white corn (I skip the butter but you can use I cant believe its not butter spray or similar) For dessert I made a fruit salad similar to the one I ate in Italy, any fruit but I used apples, pears and strawberries (peaches work great too!) with white wine and some sugar to taste.  It was a hit.   (I did have smores for the everyone as well :O)  I cant believe I got my family to eat so many fruit and veggies. (for the main course it was filet mignon)
