Hot lunch Ideas Please
I cannot make myself eat sandwiches or fruit n yogurt or cold things in the Winter for lunch. I would appreciate some hot lunch ideas. Home made soups are great but I have to watch my sodium levels.
I don't like eggs too much either.
black beans and rice...they keep really well, reheat really well and you can top them with a variety of things to change the flavor.
Stir fry-noodles, veg, and protein with teriyaki sauce
Spaghetti_easy and freezes well
A homemade pizza
Homemade lasagna
Burritos/wraps
Are you at work or something - do you have a microwave?
Personally, I took a lot of leftovers to work, and so does my husband. Spaghetti, stir-fry, etc - they all heat up well.
And if you make your own soups from scratch, you can watch the sodium in what you make, but you probably already knew that.

smwhipple; I wouldn't have thought of that for some reason. That sounds really good. Maybe even some salsa on top, homemade so there is not so much sodium. Mmm I gotta try this one.
Chrissy; Mmmm I like the burrito wrap idea but especially like the teriyaki bowl idea with veggies and maybe lean chicken. Low sodium sauce of some kind.
Puh; nope not at work, I am disabled and it's hard for me to move around but I can still cook at times. I do have a microwave but for some reason I don't like leftovers unless it's a meat, rice dish but for the most part leftovers doesn't taste the same to me, I know i'm strange lol. I do like spaghetti left over mmmmmmmmmmm.
Personally, I love oatmeal and/or eggs for lunch. I know they are generally considered more "breakfast" foods, but oats are so warming, and you can top them in the most varied ways, sweet OR savory (ever tried oats made with veggie broth & topped off with some shredded cheese, like parmesan? YUM!)
I also like fritattas - again, lots of variety and you can have it warm, right out of the oven.
And of course, there's always homemade soups/stews of all kind. You can make a big batch and have it all week, or freeze for later!
I understand not liking leftovers. Lots of things just aren't quite as good once they've been cooled then reheated.
Might it be possible to prepare the ingredients, then freeze them in individual portions, so you have your own freezer meals? That way, when you feel good, you can make a couple of things, portion them out, then eat on them all week. If you can do this once a week, then you can fill your freezer with homemade things that are quick and easy to make for lunch.
Things like casseroles would do well for this. That way, it is all put together, but is not "cooked" yet, so it wouldn't be a leftover. I don't know how much that appeals to you - but I've been doing it for my family frequently lately.
Hot ham and cheese or steak and cheese sandwiches are favorites of mine, as well. I use a lot of frozen vegetables that I can just heat up as sides.

Tuna melts and grilled cheeses.
I like nuking pastrami and swiss and eating it on toasted rye.
You could make a toasted PBJ or PBfruit sandwich. PB on hot toast gets it tasty.
I usually eat leftovers. Lots of things are even better the next day... :)
ive been eating a boca bruschetta burger (70 cals) on an arnold sandwich thin with lettuce tomato and a laughing cow light cheese wedge.. its super yummy and very satisfying for only 200 cals.. you can pop the burger in the microwave for 1 min and 30 seconds then spread your cheese wedge on the sandwich thin for about 20 seconds to warm it up and melt the cheese. its very very good
