Classic chickpea dip
| 8 | oz chickpeas |
| 4 | tablespoons lemon juice (1 lemon) |
| 2 | tablespoons tahini |
| 1 | garlic clove, crushed |
| 6 | oz water (including the canning liquid) |
| 1/2 | teaspoon ground cumin |
| 1/2 | teaspoon salt |
| 1 | teaspoon olive oil |
| 1/2 | teaspoon paprika |
- If canned, drain the chickpeas but reserve the canning liquid
- Place the chickpeas in a small blender with the lemon juice, tahini and crushed garlic
- Start blending and add enough water/liquid to make a paste of a creamy dipping consistency
- Stir in the ground cumin
- Serve sprinkled with paprika and drizzled with the olive oil
