IBS, Wheat Allergies, and Dairy Allergies
Hi,
I was just wondering how many others might be in a similar situation as myself?
I am 26 and last year, after many relentless ear infections, cronic fatigue, and cramps, I was diagnosed with IBS, a wheat allergy, and a dairy allergy. It's was really tough at first but a year later I am really starting to get the hang of eating well...it can be a bit of a balancing act and some days are definetly better than others.
A holistic nutritionist recently reccomended the book "Eat to Live" which has really changed my life.
Anyway, just wondering if there were others : )

Hi,
I don't eat meat anymore either, sometimes a bit of boiled white chicken meat in soup or meat broths in soup. i thought I would really miss it considering I was giving up wheat and dairy...but...not at all.
The allergies were only diagnosed after I went to a naturopath out of sheer frustration with ear infections. The Doctors I had seen kept giving me anti-biotics and after the fourth ineffectual round, I went to see a holistic naturopath that a friend reccomended. It turns out that ear-infections are one of the primary signs for lactose intollerance and dairy allergies. I used to have chronic ear infections growning up...it explained alot : )
Thanks for the post :)

Lararose, if you have all of those symptoms I would think you have celiac disease, otherwise known as major gluten intolerance.
Gluten blunts the tips of your vili (little finger-like projections in your small intestine) The tips of the vili is where lactase is created to deal with lactose, hence the dairy intolerance. Also, celiac disease is often misdiagnosed as IBS.
The only way to test for celiac is to take a biopsy of the small intestine tissue. Until they do that, the doctors can't really say that you don't have it.
Experts estimate 1 in 100 Americans have celiac disease.

I was tested for celiac. But the tests came back negative. I have no problems eating gluten, just wheat. Ancient grains are fine...gluten included : )
Are you Celiac?
Are you Celiac?
No, I don't have celiac, but my best friend does. We've been researching a lot of stuff about it. Did you have a biopsy, or just blood tests?
I'm not surprised to see that you have an allergy only to wheat. Wild wheat, aka einkorn, has 14 chromosomes. Kamut has 28, and spelt has 42 chromosomes. It also looks as though modern wheat has 42 as well. I've always felt that humans have messed too much with wheat, which is why a lot of people have problems with them.
Anyways, if you need some great dairy-free, egg-free, gluten-free recipes I have some.

I got blood tests which were negative for celiac, and since I eliminated wheat and dairy, as well as meat, my IBS is way more under control. Stress makes it worse, but otherwise, it is pretty good.
I would love some recipies. I have a few books, but I would love some proven "favorites" : ) Thanks!

I don't have any of the conditions mentioned above, but I was told by my doc when I was 22 that I had Crohn's Disease and I'd had chronic kidney stones (ones that required hospitalization and IVs full of Demoral) since I was 19. I went vegan and cut out foods containing artificial ingredients and everything just went away.
Hi! I feel like we're in similar situations: I'm celiac, lactose and fructose sensitive while my gut is healing, type I diabetic, allergic to grapes, cane sugar, limited fermented products.
Any time I eat dairy now, my gut swells as if I've had gluten and I'm not sure what I can do to make myself feel better. have you had any luck or found any tricks?

Between 1 out of 3 and 1 out of 4 Americans are gluten-intolerant to some degree without having celiac disease itself, and would feel better overall without the gluten foods, although eating them is unlikely to cause the severe damage that it would do to a person who has celiac.
Most go undiagnosed for decades if not forever and simply assume that the mild complaints are "normal."
