Any ideas for broccoli?

Broccoli is my favorite veggie ever. I'm usually content just to eat a bowl of steamed broccoli with a little spritz of i can't believe its not butter spray. But I'm getting a little tired of it and I really would love some new ideas- whether its a brocoli salad, or some other way to cook it and different spices to add- really, any new ideas I'd love to try. If anyone can help me with that it'd be great!

I LOVE broccoli with a slice of melted cheese over it

or with salsa

or in omelettes

or in oatmeal with curry powder

I have oatmeal with broccoli and spinach and curry powder mixed in for dinner every night! (plus some protein..)

I typically do what you do - steamed w/ no cal butter spray, but I sprinkle some Emeril's esscence or Zatarain's creole seasoning on it - it adds the perfect flavor kick.

I've also mixed in about a tablespoon low cal balsamic viniagrette and a tablespoon of parmesan cheese - the sweetness of the basalmic vinegar contrasts wonderfully with the broccoli.

I like to have it steamed, cold, dipped in light ranch dressing.  It makes good munchies to have on hand.
I like super easy things, so I put raw brocolli pieces on a baking sheet, mist them with olive oil spray and sprinkle a package of Zesty Italian Seasoning.  Sometimes I also sprinkle crushed garlic and parmasean if I have them on hand.   Bake them for 20 minutes and enjoy!
I saute broccoli w/1 tsp olive oil (but you could use PAM), and garlic paste w/a dash of sea salt and pepper.  I take it just to the tender crisp stage -- sooooo good.
For a delicious Asian taste, I like to stir-fry broccoli in a little cooking spray, with some fat free, low sodium chicken broth, some ground ginger, some garlic, garlic powder, fresh orange juice and a little sugar free orange marmalade.  Then I add cornstarch to get the mixture to thicken up a bit.  I don't add soy sauce because of the sodium content, but I'm sure it would taste great if you added it.
I like to take a regular fry pan and coat it with pan. Then chop up fresh mushrooms and onion. "stir-fry" that for a while. Once it starts to look cooked I add some frozen broccoli (because it is cheaper), turn to low and cover. Once it is done I will either throw it on brown rice or eat it plain. But always with soy sauce.
Steamed with lemon juice is good or saute it with some garlic. Just be careful you don't you to much oil.
Broccoli is one of the few green veggies that everyone in my family will eat.  One of our favorite sides is to stir fry it with some chopped or crushed garlic and a sprinkle of sea salt!  You can use Pam or Olive Oil.  I only cook it till it is hot, but still crunchy and it is gone quick!
   I love dipping my steamed broccoli in hummus.

Are you looking for recipes with broccoli in them or are you more interested in eating just the broccoli by itself?

 

Off topic, but there is such a thing as no-fat chicken broth?  WTF is in it if not fat?  heh. 

well mikelane, as it turns out, ppl will eat anything.  so if all the flavor's in the fat but fat's got calories, then for goodness sake get rid of the fat!

chicken broth is liquid that tastes chicken-y.  it can be made fresh (from boiling chicken bones and veggies and herbs) or poured out of a container.  carbs in broth come from the veggies and starches used to give it flavor and consistency.  the fat comes from the chicken, so that is often removed.  the protein comes from the chicken, and they usually leave that in.  but broth has so few calories, it's a wonder that ppl even take the time to buy fat free (sort of like buying fat free fiber one cereal).  and, in case you care at all, swanson's chicken broth is by far the best--i've tried them all, and it makes the tastiest rices, couscous dishes, sauces, braising ingredients, etc.  this link give some more info on the phenomenon: http://en.wikipedia.org/wiki/Stock_(food)

i just read something on a QOD diet thing from another forum message. its a broccoli puree. looks good. i added it to the recipes with some small modifications. it gets an A for a grade. heres the link:  broccoli puree

Broccoli sprinkled with sesame seeds is a favorite in my house.

Broccoli is welcome to hop into any dish of mine. Whether it be in whole wheat pasta, rice, soup, or potato curry. If you're looking to lose weight, use it as a "bulking agent" and use half of the rice/pasta you were going to use and replace with broccoli.

I love it in a tofu stir fry.  Sautee garlic, ginger (or pickled ginger) with some reduced sodium soy and sesame oil...toss in the tofu, coating it with all the yummy garlic, then toss in the broccoli.

I had a really good mushroom broccoli soup the other day, but I think it was cream based.

Making the broccoli with the orange marmelade is something I also do - then I add that to thin-sliced cooked beef; serve with zucchini as well, and it's terrific.  Sauted mushrooms really add to the 'bulk' and compliment the rest of the dish.
