Mollie Katzen has a recipe for egg salad that uses ricotta cheese instead of mayo. I haven't tried it yet, but it sounds really yummy.
I know of things you can put in other mayonaise based salads like tuna or chicken like cut grapes, almonds/nuts, etc but dont think theyd transfer to the taste of eggs.

My mom would ham slices into the tiniest squares and mix it into the egg yolks for deviled egs and I always preferred them that way which is funny because ham usually is too salty for me but maybe in that way its just the right amount.
I'm having this in my lunch tomorrow.  It's delicious.  A hardboiled egg with the yolk removed, sliced up with salt and pepper and a tiny bit of garlic powder, put into a pita pocket with two tablespoons of hummus.  The hummus goes so well with the egg white, and it's full  of protein too!  I love it.
I have some hummus :) I might just try that

Edit: but im looking for something thats different instead of the typical mayonaise and hummus. hehe.
I was thinking the ham doesnt sound like the healthiest addition LOL but just an FYI that just a slice would be enough for the flavoring.  Ratinhat gets props for nutrition!
you know what? i think crushed almonds/pine nuts mixed in would taste really nice, bacon bits, chives, celery, bell peppers
I think im going to make an egg and chicken pita pocket.

Im going to make an egg omelet and stuff it in the pita with chicken, lettuce, tomato and cucumber :)

what dressing or sauce should i put in it?
I've always liked my egg sandwiches with mustard.  I prefer it over mayo anyday.
Too late but was going to mention my new fav scrambled egg and black bean ::pictured beans falling out of sandwich::

add curry and celary!  it's especially good on a pita!  yum!
Yeah, I was also going to say celery, finely chopped, and a little bit of finely minced red onion.  I also use mayo but I also like to put some mustard in mine, more than the mayo really, but I like it with both together.  Any kind of mustard you like.  My preference is spicy, brown, coarse (preferably all of the above!).  A good sprinkle of chipotle powder mixed in really throws it over the top!
Maybe a squirt of Italian dressing instead of mayo, or add some canned crabmeat (or imitation krab) to the mix...or a vegetable like some chopped red pepper. Try some fresh herbs, too. Like maybe some chives or basil.
I put in chopped black olives in mine!
I really like to eat two eggs over medium on wheat with a couple slices of tomato. Yummy!
You know what I added to mine last weekend and found I really really liked it...the laughing cow spreadable cheese.  I cut it up in smaller pieces and threw it in my eggbeaters while they were cooking.  The texture of the eggs were creamier and it was OH SO GOOD!!!!
I put spinache and sweet pickle relish in mine.  I hate pickle relish with a passion, especially sweet, but it's good in those little sandwich spreads.
