Any Ideas on Salmon fillets?

Usually I'll coat them with terryaki sauce and broil for 3-4 mins each side and serve with a rice pilaf and some kind of veggie like asspargus or broccoli.

I kinda want to try something different tonight so please help... I have lots of rice, brown and white. Brussel sprouts, carrots, corn, potatoes, broccoli, spices and sauces like soy, terryaki, hot curry oil, and also pasta (not sure if those would be any good with salmon though).

I always broiled too, but my coating was lemon juice and I cracked a ton of fresh black pepper over them for a little kick.  I also like McCormick's Pepper Medley for that.

I always found steamed vegetables, especially broccoli/cauliflower, to go well with salmon in this incarnation.  I squeeze a lemon wedge over the broccolu and crack pepper on that too, it kind of pulls the plate together.  I usually served it with a sunflower seed crusty roll too.

I don't eat salmon anymore but I still make this for my fiancee about once a month.  It's very fast.
try marinading them in fat-free italian dressing before broiling them. my mom does this and it's fantastic.

Do you have a contact griller? I guess a fry pan would work too!
For an easy recipe, give foil a quick spray with olive oil spray (or some non-stick stuff), put in the fillet and top with either
* Queeze of lemon juice and some black pepper
* Dash of soy and chilli, some shallots, maybe some garlic
* Chopped up mushrooms and a wine-based sauce
* Just plain herbs/spices, with a spray of oil if you want (i dont). I LOVE chives with salmon

Grill/fry in the foil package until cooked

we bake our salmon in the oven -- a whole fish that's been split down the middle and gutted so to speak.

fill it with:

6 garlic cloves, minced
2 tbs fresh chopped dill
1 lemon, 1/4" slices

wrap in foil.  bake at 400F for 10mins per inch of fish.  So a whole fish usually takes between 20-30 mins.
I season mine with salt & pepper & lemon or lime juice, brush with a tiny bit of olive oil, and broil it for 4 minutes to a side, or 8 minutes without turning it over.  It's easy.
