Ideas to spruce up plain old canned tuna?
So I was eating my lunch today, which consisted of canned tuna mixed up with a small amount of mayo, mustard, relish, and a little bit of dill and I thought, how blah is this? So I've come here for ideas! :-D What do you all do to your canned tuna to make it a bit more appealing?
I mix my tuna with fat free sour cream & toss in chopped onions & tomatoes...sometimes some chopped egg whites. I eat it with either low fat triscuits, a toasted whole wheat english muffin, a whole wheat wrap or soft corn tortillas. I like the corn toritllas because they're much lower in sodium. (I have a problem with my hands/feet swelling if I go much over 1000mg/day)
- Tuna + Hard Boiled Eggs + Olives
- Tuna + Olive Tapenade + Green Beans
- Tuna + Capers + Olive Oil + Olives
- Tuna + Tomato Paste + Artichoke Hears + Olives + Olive Oil
- Tuna + Spinach + Garlic + Olive Oil
- Tuna + Chopped Egg Whites + Sauteed Onions (in Olive Oil) + Spinach
- Tuna + Bell Pepper Strips + Water Chestnuts + Olive Oil + Mixed Greens)
- Tuna + Spaghetti Squash + Sun-Dried Tomatoes
**Hey and what about trying canned salmon, mackerel, sardines?? These are all super good and super good for you and will give you a bit of a different taste than bland ol' tuna!
A cookbook of mine uses olive oil instead of mayo. It's actually very tasty. (Also add dijon mustard, relish and diced onion.)
Tuna, brown rice, capers, diced onion, olive oil and vinegar makes a great rice salad.
*Love* tuna stir fried with veggies and Szechuan sauce. Or, if you don't like spicy, use soy sauce instead.
WOW! you are all way more creative with tuna than I am! I never would've thought of any of these.
Capers sounds like something i'll have to try! I love capers with smoked salmon and cream cheese so why not with tuna?!
My go to tuna sandwich is usually just fat free miracle whip with S&P, and then either some sliced crunchy dill pickles (my fav!) or cucumbers or sometimes alfalfa sprouts to add that CRUNCH. If I'm being decadent I will top with cheddar and broil open faced.
I think though I'm going to have to start eating more tuna and trying out these fancier suggestions....
All of these suggestions sound fabulous! I like to mix tuna, chopped onion, beans (whichever you like best. I've tried it with black beans, garbanzos and cannelini, but any bean will do. Pick your favorite) 1 Tbsp olive oil, salt and pepper. If I have it on hand I'll add a bed of baby spinach, wilted or not. Otherwise I just scarf down as is.

I've got a sweet tooth, so I buy white albacore tuna and mix it with yellow mustard and a little manuka honey. It's definately an acquired taste, lol ...
