Well, just about anything and everything goes with brown rice. :)
I had some tonight with just some vegetable/Quorn stir-fry. And it was delicious!

If you're looking for a good breakfast idea, I saw one on youtube. Cook your brown rice and add a little soymilk. Stir until hot. Then add raisins, slivered almonds, and a dash of cinnamon to it. I havent tried it but I imagine it to be kind of like a faux rice pudding? The woman cooks for celebrities so it HAS to be good.
I like my rice creamy so I heat up some fat free sour cream with mushrooms, onions & chunks of chicken & then mix it into my brown rice. It's kinda like a rice stroganoff! lol
Last week I cooked up some brown rice then added some sultanas, sweetcorn and coriander leaves to it and mixed it together.
I cook up my brown rice with some low-sodium chicken broth and frozen mixed veggies, and I recently started mixing in a few tablespoons of reduced-fat cream of chicken, broccoli, mushroom, etc. and eating it like that. Gives it a little more kick I think. ;-)

Ooh. I just made something for lunch the other day with brown rice. It was sooo good. The best part, quick and easy, too! OK, I must confess, I recently found the Uncle Ben's Whole Grain Brown Rice Ready Rice. I gave thanks when I found this. I HATE cooking traditional brown rice. And I don't eat enough of it to justify buying a whole bag and usually end up throwing it out. These little Ready Rice bags are perfect for me, 90 seconds in the micro, and it comes out perfect! I refrigerate leftovers, which is what I did for this lunch. I had a half bag of the rice (about 1 cup) left over. I had bought a Green Giant frozen veg seasoned medley called "Immunity Boost." It contains julienne carrots, broccoli, and red and yellow bell pepper strips in a garlic/herb sauce. Very low cal, very delicious. It comes in a steam pack, 4 minutes in the micro, perfect. I pan seared about 8 jumbo shrimp (this recipe makes enough for 2 servings) using nonstick spray, a little butter spray (for flavor) and a drop of EVOO, just because shrimp are going to be bad to stick.
When the shrimp got done (about 3-1/2 minutes on medium heat), I added the leftover rice, stirred it around to warm it up, and dumped the whole cooked veg pack right in. Stirred it all up. Voila! It was sooo good. It tasted great and felt good and healthy. I also added a drizzle of light balsamic vinaigrette and tossed it around because I can't eat anything dry (after gastric bypass), and with no real "sauce" and the brown rice, it's a bit on the dry side for me. It was delicious. I plan to make it again and add a bit of broth or a healthy soup to it to make it more of a soup consistency, also to combat the dryness, which is a big problem for me personally. Most people would not have this problem with this dish. It isn't like horribly dry, just moreso than I can handle! I'm going to make it again.
Seriously, other than the shrimp, which I buy in a 3-pound raw "E-Z peel" frozen bag at Sam's for a very reasonable price, this is a very inexpensive meal at $1.18 for the veg pack, $1.17 for the brown rice pack, and 8 to 10 shrimp. Plus, if you use the whole bag of rice, the whole steam pack, and 8 or 10 shrimp, you could easily get at least 3 servings out of it, maybe 4. Could also, of course, omit the shrimp or use something else.

Me, again. Today's lunch, more Uncle Ben's Ready Brown Rice. LOL. I think I'm hooked. I seriously am going to start buying these bags more than my usual 1 per shopping trip. They are too easy and too good to be believed. Yes, more expensive, but worth it to me to keep from having to COOK brown rice.
1 can of Ranch style pinto beans, well drained, not rinsed. Heat it up and dump a whole bag of cooked brown rice into it. Stir it around. I added about 3 tablespoons of picante sauce to kick up the spicy and to, yes, give it more moisture. Made a burrito with this with a sprinkle of shredded cheddar cheese, lettuce, and more salsa on top. Delish!
Refrigerate leftovers for a quick lunch or snack!

The possibilities are endless.
You can make brown rice pilaf with chicken broth, seasonings, and some veggies like carrots or onions or something. Make it extra fibery by adding something like bulgur or lentils. Or make a big salad with black beans, chickpeas, or lentils, and mix some brown rice in. Or throw it into soups. These are just some creative ways I've come up with to use it. Mmm-mmm, I love my whole grains.
I love to combine different lentils and beans with brown rice. The way I usually fix it is, to saute diced onion, peppers, celery and garlic in just a small amount of good olive oil. Then I add spices, whatever I'm in the mood for, and cooked rice and beans. I just let it heat up. It's very filling.
