Are you a vegetarian?
Other than being a little smelly from all the fibre, nothing bad will happen unless you're short of nurtients because you're eating veggies instead of other foods like eggs, nuts, meat, tofu, beans (proteiny) and not getting enough fat (you need good fats. Trust me. I've had to cut out ALL fatt (like, not all, but for a while less than 15g per day) and it ends up hurting! (and being messy, I flake everywhere)
What else do you eat?
Do you eat tofU?
Are you vegan or vegetarian (will you eat cheese?)
eat as many as you like - vary them up a bit and you will getting a lot of nutrients from it!
Other than giving you the trots. But congrats on your healthy lifetsyle
I too eat mushrooms every day. And tomato. I prolly eat a punnet of mushrooms and 2-3 tomatoes a day. On top of the normal salads and veggies. I cant believe I used to hate them so much as a kid.
Since I began my diet 5 weeks ago, I've been eating about 10 times the vegetables I used to eat. Most days, I am getting 9 servings of veggies (plus other foods, of course.)
Spinach, tomatoes, broccoli, mushrooms, cucumbers, radishes, green beans, cabbage, brussell sprouts, onions, zucchini and artichokes seem to be my staples. (I am not a big carrot fan, but I do eat sugar snap peas about once every 3 weeks.) My favorite "grain"is bulgur wheat .... and I eat high-fiber, whole grain cereals and sprouted bread, too.

Just focus on getting a variety of colors in your vegetables and make sure to eat an adequate amount of calories that should also come from carbohydrates, proteins and fats. (the good kind. from avocados and nuts, exc..)
It might seem to you that you are eating too many vegetables in comparison to the people around you but most likely it is that other people are not getting enough.
Another reason to reconsider: I know someone who ate a lot of veggies for an extended period of time and her skin sort of developed an orange tint from too much beta carotene in her diet! Best to eat in moderation and eat to live instead of living to eat.
Also, I don't know if you are eating cooked mushroooms or uncoooked ones, but just a heads up - uncooked mushrooms can be unsafe to eat.
Store-bought cultivated white mushrooms are usually safe to eat raw and are great in salads or with dip. (from that website)
I've been eating raw white mushrooms for most of my adult life (I'm in my 40s) -- they are filling, have nutritional value, and (to me) are tasty.
As far as the orange tint to the skin goes, I've got that glow myself, and it is actually a very healthy thing. Most people are too pale due to the lack of colorful, anti-oxidant rich foods in their diet (aka fruits and vegetables). If a person has a yellow-orange tint to the skin, it is indicative of a diet which is giving some protection against cancer, which is a good thing. Even though my mid-section doesn't get a lot of exposure to the sun, it now retains a nice color instead of being a stark white when compared to parts of the body that get more sun. I really like being able to have some color without having to over-expose myself to the sun's damaging rays, which cause the skin to age more quickly.
Make sure in particular you are getting enough fat in your diet. It would be a waste to eat all those veggies, but not be able to absorb the fat-soluble vitamins in them because you're not eating any fat. Try to have one serving of poly or unsaturated fats with each meal (nuts can count as your fat... as can avocado, or fatty fishes.. or flax seed... or olive oil - use it to stir-fry or drizzle a little as a dressing).
And try to combine a vitamin-C rich choice with your dark green veggies, to up your intake of the iron in them. For example, strawberries on a salad of baby spinach...
I always figure when I crave a certain fruit or veggie, it's probably because I'm low on whatever micronutrient it provides. I went through a few months were I couldn't get enough fruit, for example. It was when I quit smoking, so I figured my body needed the vitamin C to repair itself from all the damage.
