How can I incorporate more vegetables into my meals?

I'm not good at healthy eating, and so what’s one way I can incorporate more vegetables into my meals?


Answer

First, make a pact with yourself to eat one cup (or more!) of vegetables (or fruit) at every meal.  Then, think about the vegetables you might already like and make a point of eating them.  And when you think about vegetables, consider eating some uncooked (with a dip) and others as part of a mixed dish (think soup and stew).  Think about using vegetables that are frozen, canned, dried, and as 100% juice - in addition to highly perishable fresh vegetables which should be cooked fairly soon after purchase.  Because poorly cooked vegetables are a bore, learning how to fix tasty vegetables is the key.  Read my article, Ideas for Eating More Vegetables, under the Advice tab at Experts on Calorie Count.
