Simple and quick recipe by America's Test Kitchen.
| 16 | ounce boneless skinless chicken breasts |
| 1 | tablespoon cooking oil |
| 2 | cups bbq sauce (recommends bulls eye brand) |
- Pound the thicker ends of the breasts as needed. Pat dry with paper towels. Season w/ salt & pepper to taste (optional).
- Heat the oil in a 12" skillet over medium heat until shimmering. Add the chicken and cook until light golden brown on both sides, appoximately 4 minutes.
- Add the BBQ sauce to the chicken and return to medium heat for 5 minutes. Turn the heat to low, being sure the chicken is coated in the sauce. Cover and simmer until the chicken is fully cooked and registers 160 degrees on instant-read thermometer, about 10 minutes.
