Okay, so the question is...how do you prepare the following items and how do you season them? obviously many things can be prepapred in different ways depending on the cuisine type you're going for so just pick your favorite!!

1. broccoli

--steamed with garlic and herbs or stir fried with teriyaki sauc

2. zucchini

--sauteed with lemon and pepper

3. cauliflower

--steamed with cheese melted on top

4. green beans

--sauteed with onions and mushrooms

5. sugar snap peas

--in a stir fry with soy sauce

6. baby carrots

--eaten raw with hummus

7. artichokes

--steamed with melted butter and lemon juice

8. tortellini pasta

--best with cream sauce, maybe pesto or alfredo and herbs

9. penne

--only like it with marinara sauce, and assorted veggies, with veggie soy crumbles

10. ravioli

--marinara sauce is preferable but i can forego sauce altogether and use a bit of butter, garlic, veggies, oregano, parsley, and salt

11. pinto beans

--best mashed to make refried beans and put into a tortilla for a burrito with salsa

12. salmon

--grilled with teriyaki glaze and garlic

13. shrimp

--tossed with pasta and veggies in a light sauce, maybe marinara or low cal alfredo

14. rice

--add coconut milk, curry powder, tofu and spices along with carrots and potatoes to make a delicious curry [also with lentils!]

15. tortillas

--mostly use them as wraps and to make quesadillas or beans and cheese burritos

16. pitas

--haven't figured it out yet, sometimes i'll put eggs inside...weird i know

17. spinach

--stir fried with red pepper flakes and garlic and coarse ground black pepper and sea salt

18. tuna

--usually in pasta dishes, kinda weird i know but i rarely eat it since turning vegetarian/pesectarian [sorry if i'm not politically correct]

19. salad greens

--use it as a filler for sandwiches, or top with tuna as a low cal meal

20. yams/sweet potatoes

--sliced into sweet potato fries and lightly coated with olive oil, baked, and sprinkled with salt and pepper

21. butternut squash

--mashed and mixed with low cal butter, cinnamon, and splenda

22. kale

--steamed and seasoned with soy sauce and garlic powder

23. seitan/tempeh

--grilled and  maybe a bit of steak sauce or barbecue sauce on it

24. tofu

--anyway....lol curried, stir fried with teriyaki sauce, or just plain with garlic and herbs lightly pan fried to a crisp

25. quinoa/couscous

--usually just cooked as directed and i add in mixed vegetables or use it as a base for my tofu, curry mixture

26. peas, regular

--rarely eat them because i don't much care for them but when i do i'll add them to a curry or soup

27. tomatoes

--sliced and put into pasta or eaten raw with salt

28. cucumber

--rarely eat them but when i do it's most likely in a salad or something that has dressing

29. soybeans

--never eat them because i don't really know how to prepare them in a tasty way

30. potatoes

--usually just chopped, and used in curries with garlic, cayenne pepper, red pepper flakes, salt, and black pepper

--always whole wheat, tossed with broccoli, parmesan cheese, and lemon pepper

--usually in bean chili or also in stir fries

--uuum, usually made how my mom used to make it for me, but veggie bacon, and lightly fried

35. lasagna

--i always opt for spinach lasagna, and i don't use ricotta cheese, instead i use cottage cheese and parmesan, i also make it spicy with salsa mixed into the tomato suace

36. corn, corn on the cob, baby corns

--i hate baby corn, don't eat em even when they're in my asian food. i love regular boiled corn on the cob with low cal butter and salt, and canned corn i rarely eat but when i do i like it spicy with bell peppers and crushed red pepper

37. celery

--i think it's good in asian dishes, so with soy sauce and other veggies mixed in

38. lima beans

--haven't figured these out yet

39. chickpeas

--like em with curry powder and salt, pepper, garlic

Well, apparently we like a lot of the same things, but on the things we differ on;

PEAS:  I LOVE green peas, when I was a kid we used to buy them at a farm stand (5-7LBS) and we would eat them straight out of the pod, like candy.  I add peas to lots of things.

SWEET POTATOES: a staple here in the south which I generally don;t care for, but I do like them in a sort of spicy seafood stew I used to make with shrimp and scallops and tomatoes.

TOMATOES: I like them in rice with curry and onions. Plus raw when they're ripe with salt and pepper.

SHRIMP: Almost any way it can be cooked is fine with me.  I usually sautee them in olive oil with garlic, but I sometimes make a shrimp curry served with asparagus and rice.

CARROTS: I like them raw, but I love fresh cooked carrots with herb butter (lots of parsley)

 

I have never tried kale although it is frequently in the stores down here, Have you ever cooked any other type of "greens"?  I have not tried any because down here they are usually cooked with ham hocks, and I don't know what else to do with them.

Baked, with garlic.

Also just steamed, with black pepper. Veggies are best alone, I think!

Made into a casserole with crunchy onions on top!

5. sugar snap peas

Eaten plain, or dipped in ginger dressing.

6. baby carrots

Steamed or raw w/ mustard or salsa or hummus.

7. artichokes

Steamed with dill vegenaise dipping sauce.

8. tortellini pasta

In an alfredo sauce.

9. penne

With marinara sauce and soy parmesan. 

10. ravioli

I used to LOVE ricotta ravioli, yummmm.

In soup with rosemary, soft noodles and vegan ham bits.

Pre-veg, it was well steamed w/ dill sauce.

13. shrimp

Pre-veg, sauteed w/ veggies in asian dishes.

14. rice

Steamed, with sweet and sour sauce on top.

15. tortillas

Fresh corn variety, dipped in homemade guac or made into vegan tacos w/ soy crumbles, black beans, corn, salsa and avocado.

16. pitas

Warmed, filled with hummus and cucumber slices.

17. spinach

Pre-veg, I loved warm spinach salads with hard boiled eggs, bacon and balsamic dressing. Bet I could do that w/ veg bacon and tofu! Mmmm, I'm gonna try.

18. tuna

Used to be to make tuna salad sandwiches, w/ mayo, relish, mustard, pepper.

19. salad greens

Put into a BIG bowl with dried fruit, walnuts, avocado and goddess dressing.

20. yams/sweet potatoes

Grandma's famous candied yams. 

21. butternut squash

Baked and topped w/ earth balance and brown sugar.

22. kale

Steamed w/ ginger and sesame oil.

23. seitan/tempeh

Seitan- made into a convincing chicken patty. Tempeh - BBQ style!

24. tofu

In stir fries, for sure, with tons of veggies.

25. quinoa/couscous

Quinoa - as a base for stir fries. Couscous - w/ garlic

26. peas, regular

In curries!

27. tomatoes

Baked, on pizzas or as bruschetta.

28. cucumber

Plain, w/ salt sprinkled on.

29. soybeans

Podded, as a side dish to my sushi!

30. potatoes

Baked, w/ ketchup and vegenaise and pepper.

-Steamed until crisp/tender.  Served either plain or with a drizzle of olive oil

2. zucchini

Stewed with tomatoes and bell peppers

3. cauliflower

Boiled soft and mashed like mashed potatoes

4. green beans

Steamed until crisp/tender, cooled and tossed with a garlic vinaigrette

5. sugar snap peas

-Raw or lightly steamed, just as they are

6. baby carrots

I prefer regular carrots, cut in sticks, tossed with a tiny bit of olive oil and salt, and roasted (350F for 20 to 30 minutes, stirring halfway through)

7. artichokes

Whole - dropped into boiling water and cooked well, served with lemon butter.  Baby - stir fried, or incorporated in casseroles or tossed with pasta.

8. tortellini pasta

A few in soup instead of noodles, or sauced with Low Fat Cheese Sauce

9. penne

The pasta I most often use for pasta salad - Pasta Primavera Salad 

10. ravioli

A few floated in soup instead of noodles, or served with homemade tomato sauce.

11. pinto beans

The best for chili.  Also Hot Bean Dip on yellow corn tortillas 

12. salmon

Broiled with lemon juice, lemon zest, and herbs.  Served with low fat sour cream or non fat greek yogurt with fresh dill to make a sauce.

13. shrimp

Either steamed and eaten as they are, or sauteed in olive oil and garlic.

14. rice

Cooked in seasoned broth and incorporated into casseroles or served as a side dish.  I like brown rice best, and I like different varieties of rice.  It's good with curry, chili and I make a good pilaf with chicken.

15. tortillas

I prefer the old fashioned yellow corn tortillas, and I eat them the traditional way with any Mexican food, especially beans.  I also cut them in quarters, spray lightly with olive oil and bake until crisp.

16. pitas

Stuffed with any salad or sandwich ingredients.  My favorite - hummus with chopped tomatoes, lettuce and cucumbers.

17. spinach

-Raw or lightly steamed, or sauteed in olive oil and garlic then dusted with grated parmesan cheese.  The simpler the better.

18. tuna

Fresh - Seasoned with olive oil, lemon zest, lemon juice, salt and pepper, and broiled.   Canned - traditional tuna salad with mayonnaise, for sandwiches or served in half a hollowed out tomato.

19. salad greens

-Used for anything you'd use regular lettuce.      & nbsp;   

20. yams/sweet potatoes

21 Yams/sweet potatoes - pierced in several places, microwaved and eaten as is, right out of the skin.

21. butternut squash

Made into soup - cook soft and puree with seasonings. 

22. kale

Kale and White Bean Soup   

23. seitan/tempeh

I only eat it in a vegetarian restaurant where they are very creative.  Don't particularly like it.

24. tofu

Tiny cubes of silken tofu floated in soup.  Marinated in  soy/ginger/garlic, patted dry and stir fried lightly.  

25. quinoa/couscous

Quinoa - pilaf with caramelized onions, carrots and celery.  Couscous - cold salad, like tabouli with chopped onions, tomatoes, peppers and lemon juice, lots of parsley.

26. peas, regular

Only as a rare side dish, simply steamed.  I also do a pureed green pea soup that is very pretty and can be served hot or cold with a dollop of sour cream.

27. tomatoes

Eaten just as they are.  Chopped into all kinds of salads.  Cooked to make sauce.  Sun dried chopped into pasta with olive oil and garlic.

28. cucumber

Salad ingredient in all kinds of salads, usually chopped fine and combineed iwth tomatoes, onions and peppers, seasoned with salt and lemon juice and lots of parsley.  That mixture can be combined with a cold cooked grain to make a great dish.

29. soybeans

I don't bother with these.  I really don't eat a lot of soy products because they have an adverse affect on me.

30. potatoes

so many ways!  Baked in their skins, mashed, sliced and sauteed, layered in casseroles like my Tiella.  Potatoes are surprisingly nutritious.

--great on the George Foreman with a little sea salt and spray olive oil

--not fond of the tough texture

--chopped and mixed in with my veggie stir fry or raw

--again a texture thing with me - if it squeaks like rubber when chewed - I don't eat it!

--grilled, or broiled with thinly sliced red peppers. 

5. sugar snap peas

--stir fried, sprinkled with toasted sesame seeds.  sprinkled with ponzu sauce (soy + fresh orange juice + fresh lemon juice) 

6. baby carrots

--steamed very slightly, then topped with good olive oil and curry powder.

7. artichokes

--rarely eat them (too expensive!).  If i do, steamed and dipped into vinaigrette. 

8. tortellini pasta

-- I don't eat this

9. penne

--with shrimp and spicy tomato sauce  

10. ravioli

-- Don't eat this either, unless I've made it myself (rare).  If so, filled with spinach & ricotta, then simply topped with good olive oil and basil.  Shred real parmesan on top at the table.

11. pinto beans

-- Mashed with salsa, cumin, and chili powder.

12. salmon

--Plainly grilled with rosemary, sprinkled with lemon juice at the table. 

13. shrimp

-- Steamed with Old Bay, dipped into homemade cocktail sauce.

14. rice

-- Steamed in a rice cooker with a bag of green tea (a Japanese lady taught me this - delicious way to have brown rice!) 

15. tortillas

-- Filled with grilled chicken and sundried tomatoes with low fat shredded mexican cheese, to make a quesadilla

16. pitas

-- Toastedhaven't figured it out yet, sometimes i'll put eggs inside...weird i know

17. spinach

--raw with strawberries and balsamic vinaigrette, or sauteed with mushrooms and rosemary

18. tuna

--my favorite lately is with a little soy sauce, cilantro, lemon juice, shredded lettuce, brown rice, all mixed together and wrapped into seaweed sheets- a kind of asian "taco"

19. salad greens

--for sandwiches, added at the last minute to pasta dishes so they wilt slightly, in all kinds of salads

--mashed with very finely chopped broccoli, and sprinkled with old bay and lemon juice

--sliced into "steaks", topped with a dijon mustard/balsamic mixture, then broiled

--shredded VERY thinly and made into a "slaw"

--I don't eat this

--If I happen to eat it, I marinate it in soy sauce, lemon & orange juice, then sear it. 

25. quinoa/couscous

--Steamed in rice cooker, then added to salads.  Or cooked in 1% milk and topped like oatmeal (with cinnamon & chopped apples - blueberries and a little honey)

--Run them through a food processor with edamame and mint/basil for a delicious dip.

27. tomatoes

--sliced, with basil and balsamic, good olive oil. 

28. cucumber

--sliced over asian stir fries (at the very end), or topped with dill and celery seed as a side dish

29. soybeans

-- steamed, then sprinkled with soy sauce and sesame seeds

30. potatoes

--Try to avoid them.  If I do eat them, I prefer them as oven fries, dipped into dijon mustard.

31. mushrooms

--raw with very thinly sliced celery, lemon juice and a little shaved parmesan. 

32. spaghetti noodles

--plain with olive oil, garlic, crushed red pepper and basil, or with lots of veggies, with shrimp and parsley...

-- Add them to nearly every cooked vegetable, or grilled.

--I make a great thai slaw, or have it as polish stuffed cabbage (only a winter treat).

--this is not low cal at all, but my dad makes shrimp stuffed with monterrey jack cheese, wrapped in bacon and sauteed. then you dip it in a sauce made with sour cream and chipotle peppers...OMG SO GOOD!

--chicken tacos, quesadillas, or good morning wrap (cottage cheese, pineapple, honey and sprinkle of cereal/granola)

--I had couscous once- the kind out of the box, never had quinoa. I've been wanting to try both (again for the couscous), but am hesitant...

--I don't like baby corn, but LOVE corn and corn on the cob just with a little spray butter, salt and pepper....I've also put parmesean cheese on it and it's good.

--with PB and raisins....ants on a log!

38. lima beans

--MMMM I LOVE LOVE LOVE lima beas....I totally forgot about them though! If you're being healthy, just boil for a long time. Other wise, add a little bacon or oil and then boil.

39. chickpeas

--made into hummus with garlic or roasted red peppers
