Interesting information on eggs

Listen Eggs are good food. They're high in protein, vitamins and other nutrients. But because they're high in cholesterol -- 210 milligrams in a large yolk -- eggs have gotten a bad rap.
But according to March issue of the UC Berkeley Wellness Letter, (http://www.wellnessletter.com/) "eggs do not raise blood cholesterol in most people -- and they may even be good for your heart in some ways."
In fact, the Wellness Letter says, a number of studies show that "eggs do not appear to contribute to heart disease in most people."
Recommendations about egg consumption have changed over the years, and they're a lot more liberal than you may realize.
For instance, the American Heart Association does not specify a limit on how many eggs you can eat. AHA does say a healthy adult should limit cholesterol intake to about 300 milligrams a day.
Some experts think you can eat more than that -- because cholesterol in food doesn't tend to raise your blood cholesterol -- saturated and trans fats do that.
The bottom line: The Wellness Letter says most people can eat one or two eggs a day. Just don't mess them up by preparing them with fatty, salty ingredients or serving them with unhealthy side dishes.
I eat at least 2 eggs a day now and my cholesterol is 122.
When I was a teenager and didn't eat eggs, but ate tons of junk food, my cholesterol was 150.
I have been told that there is enough "good" cholesterol in the whites to counter act the "bad" in the yolks.
My eating plan calls for two eggs with veggies for breakfast. My mid-morning snack is a shake and I have to eat on the way to work (half hour after meds) so I have my mid-morning first and my eggs for my mid-morning. It works pretty good.
I have this wonderful little counter top oven I got online (GT Xpress 101) I use to make my eggs and veggies. I use 1 cup mixed veggies (mushrooms, spinach, tomatoes, asparagras, onions, etc along with ground flax seed) and two eggs. Put 1/2 cup veggies in each "bin" of the oven and pour whipped eggs over. Totally love it. It is the only healthy thing my hubby will eat.
But if I ever become a picky eater and only want to eat eggs, I'm only eating eggs. I'd rather die happy with my indulgences than die miserable, wishing and praying for an extra two minutes on this earth so I can wolf down an egg.
