Recipe Ingredients for Italian Stuffed Zucchini
| 4 | zucchinis |
| 4 | links Italian turkey sausages |
| 1/2 | cup bread crumbs |
| 3/4 | cup mushrooms, diced |
| 1/4 | onion, diced |
| 2 | eggs, beaten |
| 1/4 | cup parmesan cheese |
| 4 | cloves garlic |
| 1/2 | tsp basil |
Recipe Directions for Italian Stuffed Zucchini
- Wash and cut off ends of zucchini. Cook in boiling water for 7 minutes. Cut in half lengthwise, scoop out pulp leaving shell. (Save the pulp).
- Brown the sausage, onion and mushrooms. Drain the fat.
- Mix in the bread crumbs, eggs, zucchini pulp, paremesan and spices.
- Arrange zucchini shells on a baking pan. Fill each with sausage mixture.
- Bake at 350 degrees for 30 minutes. Let cool and serve warm.
