This salad is a good side dish served Hot or Cold Can be topped with some grated parmesian cheese if desired

Recipe Ingredients for Italian Style Bulgur Salad

1 1/2 cups Bulgur
1 tbs Olive Oil
1 onion
1 green pepper
2 cups broccoli
1 1/2 cups zuchinni
1 tomato
2 cups Fat Free chicken broth
1/10 cups basil
1 tsp red pepper flakes
1/2 tsp kosher salt
1/2 tsp black pepper

Recipe Directions for Italian Style Bulgur Salad

  1. Sautee the Onion and Green pepper for 5 min until onion is translucent.

  2. Add in salt, pepper and red pepper flakes.

  3. Add Broccoli and zuchinni and sautee for an additional 3 min.

  4. Add in Bulgur Wheat and mix in with vegetables

  5. Pour in Chicken Broth and stir. Bring to a boil cover pan and reduce heat and simmer for 8 to 10 minutes until liquid is absorbed.

  6. Mix in tomato and Fresh basil
