I've eaten almost 2400 calories today.

Here's how it went:

Breakfast of prunes and flax seeds in water, plus two apples and a banana, and a piece of seitan.

Second breakfast of oatmeal, yogurt and blueberries.

Then I snacked on some Special K cereal, cornflakes, cucumbers, carrots and more seitan.

Lunch consisted of a bit of cucumber, some cottage cheese and seitan. (the seitan is getting repetitive, I guess, but honestly, it wasn't that much at once)

Then I had another bowl of oatmeal with full fat milk.

Later I had a slice of bread, and more seitan.

Just now I had two slices of toasted bread and some kajmak (Turkish clotted cheese).

And I'm not even finished yet!

The good part is, with all that I've had so far today, I still have a 600 calorie deficit. I burned like 1300 calories through exercise alone today, with a softball tournament and mountain biking.

I feel sort of like a miniature Michael Phelps right now, I mean, to maintain my weight, I would need to eat like 3000 calories or more.

You rock! I thought this was going to be another post about someone complaining about eating "too much" but nope.  Congrats on good eating to fuel the activity :-)

I've eaten 2300 calories today! But like you, it feels great because my deficit is still around 600. I ran nine miles today! So I burned a ton.

I ate 2500 calories yesterday! lol

I ate 2300 calories today! I burned 3850 though. Cool

And no, I am not eating another 550 calories tonight so that my deficit is less than 1000.. I don't do this every day, and unfortunately will probably make up for it in restaurant food tomorrow anyway.

good food choices - plenty of fiber and protein.  But where are your vegetables?  You do need them.

Without seeing your analysis, OP, it sounds very well-balanced.  Great, encouraging post reminding us you can eat all day long and still lose weight!!

Wow, that is amazing!! I am sooo jealous that you can eat that much and still have a deficiet, LOL. No really, thats really great!Laughing Quick question though. What is seitan??

i'm not the expert on seitan, but from what i understand via my vegan sister, it's essentially wheat meat. You can buy it in health food aisle at larger or higher end grocery stores and places like whole foods always carry it. you can also make it somewhat easily at home by buying, boiling and kneading the hell out of wheat gluten. I hated it when i first had it because the person making it didn't know how to work with it at all. my sister makes this barbecue seitan that i swear is better than most any barbecue i've had before. It's so tender and juicy in the bbq sauce--now that i'm thinking about it, maybe i'll make it today for labor day.

 

 

oh, and i agree. that is awesome that you were able to eat so much and still have a nice deficit. I LOVE working out for this reason. The more i work out, the more i can eat, but also, the more i shun junk foods. I just don't want any grease in my body after a nice long bike ride or 30 minutes on the eliptical trainer. so, way to kick some ass!
