Recipe Ingredients for Japanese Eggplant w/Mirin

1 japanese eggplant
1 tbsp canola oil
1 tsp soy sauce
1 tsp mirin
1 tsp ginger juice
1 tsp chili paste

Recipe Directions for Japanese Eggplant w/Mirin

  1. Slice the eggplant into 1 inch disks, soak in salt water for a few minutes, rinse w/cold water and squeeze out extra liquid

  2. Saute in oil until browned, around 8 minutes

  3. Add Mirin, soy sauce, ginger juice and chili paste and cook until tender and glazed
