Jasmine rice coconut shrimp spiced soup

Well i really love this recipe im not sure how many calories are in it so if someone could help that would be great!

ingredients

1.) 1 cup of jasmine rice.

2.) 1 can of coconut milk.

3.)1 cup of rose water(optional).

4.)4 tbsp of sugar.

5.)1/3 pound shelled shrimps.

6.)garnish with ; ginger spice and shredded coconut.


Directions: bring water to a boil and add the jasmine rice.

when the rice is fluffy mix in 1 can of coconut milk ,3 minutes on low heat stir in 4 tbsp of sugar and the shrimp.

serve hot ,garnish with shredded coconut and ginger spice.

i love this recipe because its really refreshing to eat,it kills the "sweet tooth"and it makes a heavenly aroma in ones home.

use the recipe analyzer.  but i'll warn you up front - coconut milk is very high in sat fat.

Use the light coconut milk

You can get "lite" coconut milk in cans.  Or you can defat it yourself.  Pour it into a container and refrigerate it overnight.  In the morning, simply lift of the hardened fat and throw it away.  It's just as flavorful without the fat.

thanks clairelaine - that's good to know!  two of my favourite recipes use coconut milk, and i only allow myself to make them about once a year each because of the fat.  i'm going to try your way ;)
