Recipe Ingredients for Jicama Slaw Caribe
| 1 1/4 | lb jicama, peeled and shredded |
| 1 | carrot, peeled and shredded |
| 1 | Granny Smith apple, peel left on, cored and shredded |
| 1/2 | small radicchio, cored and slivered |
| 2 | scallions, finely minced |
| 5 | tbs freshly squeezed lime juice, divided |
| 1/2 | tsp kosher salt |
| 1/2 | tsp ground coriander |
| 1/8 | tsp chili powder |
| 1/2 | tsp Dijon mustard |
| 1 | tsp honey |
| 2 | tbsp extra virgin olive oil |
| 1/2 | cup fresh cilantro leaves, or basil leaves, chopped |
Recipe Directions for Jicama Slaw Caribe
- Place the jicama, carrot, apple, radicchio, and scallions in a large mixing bowl and toss with 1 tbsp lime juice. Mix well.
- In a small container with a tight-fitting lid, combine remaining 4 tbsp lime juice, salt, coriander, chili powder, mustard, and honey, and mix. Add olive oil, secure lid, and shake well.
- Pour dressing over jicama mix and toss to coat thoroughly, then add cilatro and mix well.
- Cover and refrigerate at least 2 hours and up to overnight. Serve chilled.
