Recipe Ingredients for Jicama Slaw Caribe

1 1/4 lb jicama, peeled and shredded
1 carrot, peeled and shredded
1 Granny Smith apple, peel left on, cored and shredded
1/2 small radicchio, cored and slivered
2 scallions, finely minced
5 tbs freshly squeezed lime juice, divided
1/2 tsp kosher salt
1/2 tsp ground coriander
1/8 tsp chili powder
1/2 tsp Dijon mustard
1 tsp honey
2 tbsp extra virgin olive oil
1/2 cup fresh cilantro leaves, or basil leaves, chopped

Recipe Directions for Jicama Slaw Caribe

  1. Place the jicama, carrot, apple, radicchio, and scallions in a large mixing bowl and toss with 1 tbsp lime juice. Mix well.

  2. In a small container with a tight-fitting lid, combine remaining 4 tbsp lime juice, salt, coriander, chili powder, mustard, and honey, and mix. Add olive oil, secure lid, and shake well.

  3. Pour dressing over jicama mix and toss to coat thoroughly, then add cilatro and mix well.

  4. Cover and refrigerate at least 2 hours and up to overnight. Serve chilled.
