Recipe Ingredients for Kale Broccoli Salad

10 c. kale, raw, rinsed, stemmed and chopped
2 c. chopped broccoli
1/4 cup canola oil
1/4 cup rice wine vinegar
1/8 cup orange juice concentrate
1 tsp. honey
1 tsp fresh ginger
1/4 tsp. sesame oil
1/3 c. dried cranberries
1/3 c. golden raisins
1/3 c. pumpkin seeds
1/2 c. sliced almonds
1/4 c. sunflower seeds
1/2 c. chopped crystallized ginger
1 pinch salt
1 pinch pepper

Recipe Directions for Kale Broccoli Salad

Mix all of the ingredients except for the kale, cranberries, and seeds together in bowl with a whisk until well combined. Pour on top of kale and mix well until all leaves coated. Sprinkle on the cranberries, almonds and pepitas. Let salad sit for at least 1 hour in the fridge so that kale softens up a bit. Best if eaten the next day!
