Recipe Ingredients for Kelly's Butternut Squash Soup

2 T unsalted butter
1 small shallot
3 pounds butternut squash
5 cups chicken broth
1/2 cup light cream
1 t splenda brown sugar

Recipe Directions for Kelly's Butternut Squash Soup

Melt butter in large stockpot until foaming. Add finely chopped shallot and cook, stirring frequently, until translucent, about 3 min. Remove seeds and strings from the squash and add to the butter & onion and cook about 4 min- until butter turns color of squash. Add broth and 1 tsp salt and bring to boil over high heat. Reduce the heat to med-low, place the squash cut-side down in a steamer basket and lower the basket into the pot. Cover and steam until the squash is completely tender - about 30 min. Take the pot off the heat and use tongs t transfer to a rimmed baking sheet. When cool enough to handle, use a large spoon to scrape the flesh from the skin. Reserve in a bowl - toss the skin. Strain the steaming liquid through a strainer into a second bowl. Puree the squash in batches in the blender, pulsing on low and adding enough liquid to obtain a smooth consistency. Transfer the puree to the clean pot and sitr in the remaining liquid (depending on taste. I like it heartier and do not add all the liquid). Add the cream and brown sugar and warm over medium-low heat unti hot, abuot 3 min. Serve
