Knives? I need a GOOD knife for preparing food.
I do not know if this is the proper place to ask this question but I will go for it anyway.
Since I have started my lifestyle change I find myself spending a lot more time in the kitchen cooking. I have found that I do not have a good cheif's knife that will do anything from chopping, dicing, trimming etc. All of my knives are junk.
Does anyone have any suggestions as to where I can order a good knife or set of knives on the web? I have searched and everyone has the perfect knife or set of knives they are trying to sell. It is so confusing.
Any suggestions? Thanks in advance.

That's where I got my Wusthof brand knives. They're fantastic, if a little pricey. I got an 8 piece set that comes with a block for storage, and I love how much easier they are to use (compared to my crappy old ones that just demolished tomatoes).
If you check for a local cooking store (phone book or internet), some of them may do free sharpenings on knives you buy from them.

I bought a set of stainless steel knives from walmart got the whole set and block to store them in for about 40.00 and i love them.
I LOVE my wusthof knives. Particularly my santoku (Japanese Chef's knife). They're pretty pricey, but if you just buy one it wont' break the bank and you'll love it.
My link is to Williams Sonoma, which is a little pricey, I'm sure if you shopped around you could find a better deal.

Really pricey, but I love cutco knives. http://www.cutco.com/jsp/home.jsp
Definitly love my henkels
my husband got me a cuisinart santoku knife for christmas, I love love love it!
I have the cuisinart santoku too, I use it all the time, it's such a quality knife. It's a little big, but it can do a small knife's job.
I have a Victorinox paring knife that I just throw away and get a new one when it dulls (about every year or so) and those are about the only two knives I ever use. Oh, I have a long serrated bread knife too. I cook a LOT and they all get a lot of use.
Please remember that your knives will last much longer and stay much sharper if you rinse and dry them immediately after use. I came the closest I've ever come to killing my fiancee the first half dozen times I found that lovely knife jammed in the dishwasher with peanut butter and bread crumbs smeared all over it.

Invest in really good knives, you will not regret it. They might be expensive, but last really long; if you calculate the prize per annum it turns out that they are not that expensive after all.
I work in a hotel, and brands that I often see used by the Chef's are Zwilling, Wusthof, and Henckel (all knives from Solingen, Germany), but i am usre there are many good brands out there.
If you can only invest in one knife, get a good Chef's knife; expect to pay around USD 100.00, but it will last a life-time if properly taken car of.
Do not buy mail order. Like a good shoe, a knife needs to fit. Try many knives and see if they suit the size of your hand, if they balance well, etc.

i have henckels and wustof, and they're both excellent HOWEVER they won't stay sharp on their own - no knife will. so invest in a good steel and sharpener, and sharpen your knives at least monthly, depending on use. i usually do mine every 2 weeks, but i use them alot. do this and they should literally last forever.
Hmmm, I quickly pull my knives across the sharpener before every use and give them to a professional sharpener once a year.
we bought one of those ronco knife set from tv. 25 knives i believe. each knife has a specific purpose. i really like them. and the knives are numbered (you could look up each of their uses in the manual) and if you get the block, it tells you which knife goes where on the actual block so you wont have to search for the right knife. it's right on the block. and it brings a sharpener.
here's the site (and it's buy one set and get one free. totally worth it):

I have the trident knives, which are okay. The most wonderfully awesome sharp and economical knives are from IKEA! I have the 3.99 vegetable knife, and I use it for everything. It's better than the ginsu commercial. I have my $400 trident set that are collecting dust because I prefer my cheap knife that is way more sharp. :)
Ahhh cutco i remember them they are awesome.
We have professional Henkels knives, and they are great. I have also used the Wustoff knives. BUT I have fallen in love with Global knives. A friend gave us one for Christmas last year and that is all I asked for this year. Since my husband is also a fan, I got several. They are Japanese, and are in the same price catagory as the Henkels/Wustoff higher end lines, but a little harder steel so they hold the edge a bit longer. I think I like them mostly because they are lighter so more maneuverable for me (small hands) because the handles are stainless. The sharp factor makes it really easy to chop too.
The best thing you can do is go to a knife shop (we have one in our local mall), or a high end kitchen supply place like williams sonoma or sur la table and feel some different types to see what is most comfortable and learn about the different types. Then go on line if you want to find the best price. For example, one of my best friends also got knives from her husband for Christmas, but got an IOU so she could pick them out herself. I raved about the Globals, but she liked the feel of the Wustofs. So, you never know......
And a really good sharpener that you know how to use is really important! If you don't do it right you can damage the knife (which a professional can fix, but it will wear it down more than necessary).

I bought my good knives one at a time as I could afford them. My favorites
Wustoff santoku
Henkels 8" chef's knife
Mundial 11" chef's knife
Wustoff paring knives of varying sizes
Mundial carving knife
Henkels kitchen shears
I hone them with a rod after use and have them sharpened once a year. I'd like to learn to use a whet stone and sharpen them myself, but they were so expensive and I don't want to risk ruining them.
I got some really nice blade guards that slip on, so I can keep them in a drawer. I don't have the counter space for a knife block.

Just bought a 12 piece set of Henkels from Costco...LOVE IT!
Great knives are a joy. End of story. But...a good Kiwi steel will be $5 and last years. Found in most Oriental food stores.
cutco knives are the best! Don't need to sharpen. My neighbors had a set that was around 40 years old that finally needed new edges - they sent them back to the company and got all new edges on their knives - talk about customer service.
