i'm making a pan of lasagna for dinner today
and i got to thinking that if done right it's actually one of the healthier things you can eat and it freezes so well that you will have dinner on hand for a long time
i don't think anyone cares, but I like writing out my meals so here goes ...
i'm doing 3 layers of whole wheat lasagna noodles
for the sauce i'm using whole peeled tomatoes diced up in the food processor with bell peppers [green, red, yellow], mushrooms, zuchini, broccoli, green onions, garlic and a dash of extra virgin olive oil
then i'm mixing in a little yves veggie ground beef
spices
and then a layer of cottage cheese mixed with basil, cilantro and spinach
then more sauce on top
and about a cup of skim mozarella for the whole pan, a sprinkle of parmesan, and a sprinkle of oregano
it's like eating salad
speaking of salad... there will be salad on the side with spinach, diced tomatoes, basil and garlic with iceberg lettuce for crunch with balsamic vinegar and olive oil
and a garlic crustini dipped in the sauce [ no oil]

I'd say yes, that sounds very healthy and very filling. Good job on making a healthy food that at least sounds quite delicous!

you could even use like a kidney bean instead of imitation ground beef i suppose for a 'chili' like sauce
Can I ask where and what brand for the whole wheat lasagna noodles? I've been looking for them forever, that's the only shape I can't find.

it's strange that you haven't been able to find it, because i generally find a wide variety of brands of whole wheat lasagna noodles at most grocery stores
Where do you shop? I do Safeway and Trader Joe's and both have every variety of whole wheat except lasagna. I get Healthy Harvest spaghetti, thin spaghetti, and rotelle all the time, and TJ's whole wheat fettucini and linguine, but never any lasagna to be found!!!
i do shop at safeway sometimes, also wal-mart, local grocery stores, costco, superstore.. basically everywhere.. we don't have a TJ's here tho

You can also thinly slice zucchini lengthwise and use that instead of noodles. (Put them in the oven until a little tender before layering.) It tastes awesome!

My mom makes a baked eggplant parm and it's amazing and really healthy! She cuts the eggplant, salts it, and drains it. Then she breads it with whole wheat bread crumbs using egg whites and layers it in a pie pan with homemade tomato sauce and a tiny bit of lowfat parmesan and then bakes it up. It's soooo good, indulgent, and healthy! The entire pie has about 500 calories depending on your sauce and cheese and it serves about 4, so like 125 cals per serving. Plus a side salad and you'd even have room for desert :)
I use eggplant instead of noodles. I cut it length wise and score it first otherwise the skin gets too tough or crispy to cut/chew through. I add onions, carrots, zucchini, spinach, mushrooms, 95% lean ground beef, 1% cottage cheese, skim mozz, fresh tomato marinara, seasonings and friggin yum! My 9x13 pan will get me 10 nice size servings for a measly 250 cals per...
