Laughing Cow cheese?

I was just wondering how you guys use this stuff, aside from eating it plain or putting it on bagels or crackers? I crumbled mine up and added it on top of an egg white omelet?I really love the taste but I?m curious as to where else you guys have used it? I love to cook so recipes welcome.

I use it on crackers ! very tasty! not sure if its low fat though is it?
I use it on my tofu shitarki noodles.. yummm. I got a recipe from Hungry Girl for this knock-off alfredo, its really good! I revised it a bit to my liking and I belive this is it..

1/2 wedge laughing cow light cheese
2 tsp parmesean cheese
2 tsp fat free sour cream
salt and pepper to taste

I made it like that the first time, then the second time I upped the sour cream to 1 tablespoon, and added a tsp of light whipped butter ( I needed to add my fats to the day somehow ) And that batch turned out the best! Its all about personal preference though.
I buy the "light" only 35 cal per wedge and oh, so creamy.  Love it and eat it as is.

Try it on a sandwich instead of a slice of cheese, it's delish.
In addition to the usual crackers and toast, I have also used it in an omelet, spread onto a dry-skillet-warmed wrap while it still warm, and last night, my favorite use so far:  BAKED POTATO!!  I put a Light French onion (35 cals) into a medium/large hot baked potato and sprinkled it with chopped green onions, a little salt, and pepper.  Oh my goodness.  I honestly can say I did NOT miss the 300 to 400+ calories of butter, sour cream, and shredded cheese I used to use instead of this.  It was awesome!  It tasted great and it felt great!  I am fairly new to this cheese so I haven't discovered very many other creative uses yet, but I am determined to keep at it until I do!  :-)  Thank goodness for the Laughing Cow!

the baked potato thing sounds amazing! I mixed mine with some cooked spinach. I also made a quiche by mixing a little skim milk, egg whites, the french onion cheese wedge, spinach, garlic, onions, tomato and pepper and baking it. MM!
mooo, both of those ideas sounds awesome!
I put it on a La Tortilla Factory tortilla for a snack, or eat it with apple wedges. I also like to spread it on some chicken, cover with spinach and asparagus, roll the chicken and bake it. Yummy cheesy chicken dinner!
Sandwhiches - toasted of course. Ham cheese and tomato, or tuna and tomato goes nice - melty and gooey on the inside and crispy on the outside.
Also you can get a light tortilla, fold in half, with LC in the middle and press on a grill and dip in salsa for questadillas.
Can use in alfredo sauces

Dont microwave. it doesnt work :)

 I like the plain light and just eat it plain or with a toasted bagel.  That cheese is so good that you can just eat it plain! Laughing

Slice up a hard apple like Fuji or Rome and spread the creamy swiss lauging cow cheese on it.  De-lish!!!!

1 wedge 50 cals.....thats a 100 cal snack.  Yeah baby!!!  And no additional flour carbs.

if you're ever making mash potato make sure to try mashing some laughing cow cheese in with it. i used to use normal cheese but that was a no-go when i started healthy eating so i swapped it for laughing cow triangles. it makes the potato creamy and yummy!

 

kariudo:  I do this, too, with the mashed/whipped potatoes!  Actually, I started out making mashed potatoes for 3 to 4 people using about 8 tablespoons of butter plus whole milk/heavy cream. 

In an effort to cut that down and make them healthier (hubs LOVES mashed potatoes), I cut the butter down to 2 tablespoons plus about 2 tablespoons of cream cheese and 2 tablespoons of low-fat milk.  They are amazing!  Just as good and actually better than before.  I'm about to take it down even more and use light cream cheese for the regular.  The Laughing Cow cheese would do the same thing, though, and probably for a few fewer calories.  It's awesome.  My new way of making mashed potatoes has turned out to make the best mashed potatoes I've ever made, light and fluffy and delicious everytime!  And, WAY LESS guilt.  Practically none, even, in reasonable portion sizes.
There is an "Extra light Laughing Cow"Cheese.  It comes in puple packaging and is only 20 cal per triangle.

I just laughed out loud at george's response!!! My first encounter with "la vache qui rit" was in my high school french class. We had a cheese fete, where everyone was supposed to bring in a french cheese and someone brought in Laughing Cow and labeled it as "la vache qui rit." I fell in love with it there though and for a very long time I brough laughing cow with wheat thins for lunch. For some reason, to me, Wheat Thins are the best combination with the regular light Laughing Cow. Now, for a light snack, I'll get a 100 calorie pack of Wheat Thins and a wedge of Laughing Cow ... yum!
