So thanks to this site I have now discovered laughing cow cheese! It was like Christmas when I finally found it! I love this stuff!

I was just wondering what you use it on / with?

Just looking for ideas to use it like for snacks / meals?

i honestly feel like the only person in the world that dislikes laughing cow cheese. the texture just makes me ill. my mom adores the stuff though.

she likes to spread it on crackers, dip celery/cucumber in it, or put it over warm pasta so it gets all nice and melty and kind of tastes like alfredo sauce.

I love Laughing Cow with Triscuts (Garlic). It is so good!

It's a great way to add flavor to anything, really.  I like to toast La Tortilla Factory low carb/low fat tortillas (80 cals) with laughing cow on it (to make it melty).  Add chicken  breast and grilled veggies--lot of bang for your buck flavor-wise.

This may sound strange, but I've actually used it to make alfredo sauce.  Mix a wedge with some skim milk and hot pasta and a little parmesean cheese.  It will melt down onto the pasta.  It's a great cheese fix and a great alternative to creamy pasta sauces.  Enjoy!

I agree with using the wedges in a sauce for pasta  - great alternative to alfredo.

The wedges are also great spread on triscuits, I also like them spread on a tortilla as a base for a wrap sandwich.

The cheese rounds are just good plain for a quick snack, but they could also be melted for a cheese sauce.

I smear it on cucumber slices and celery sticks, it is also great on a toasted slice of whole wheat bread.

When I need a quick snack, I just grab a handful of the small squares and eat those - having to unwrap each little cube slows me down and forces me to eat a lot slower too! Usually with small snack items I eat them too quickly, not the case with these.

Whack it on a jacket potato its sooo good

I like to toast a whole wheat english muffin, spread laughing cow on it and then put some fried egg whites on it. It's kinda like an egg mcmuffin. You could add ham or some other meat to it too and it would probably be good

For some reason, when I tried to melt the lite laughing cow into a sauce, it didn't melt for me and was all lumpy -- like lower-fat cheeses tend to be.  I wonder if I did something wrong, or was just expecting too much?

This is how I love it:

1) On a whole wheat english muffin with 2 oz canadian bacon and a dallop of mustard & ketchup...mmmm. Delicious and super quick breakfast. If you use only 1/2 the muffin you're looking at about 173 calories w/ 16 grams of protein and a few grams of fiber.

2) On a whole wheat wrap with deli sliced turkey breast, lettuce, tomato, red onion, red pepper relish, oregano, a sprinkle of parmesan and a splash of red wine vinegar.

Now I'm getting hungry!

I use it as the "cream sauce" for a Chicken Cordon Bleu (sp?).  Just cook a chicken breast (I like grilled or fried up in a little olive oil), and cook 2 slices of ham.   Put the Laughing Cow in the middle, and it is a very low cal...high protein dinner item!  Serve alone or as a sandwich.  Added perk...try the Garlic/Herb...even better!!!

stir in some splenda and cinnamon, and then spread it on some fruit or a bagel, or roll it up in a low cal tortilla to cut it into "cinnamon rolls"

Spread on bread with tomato slices, or tuna and toast. Also in wraps with sweet chilli sauce. 

Just found this out in an experiment the other day:

I sauteed ~1/4 cup chopped red pepper in a little olive oil. When it just started to turn soft, I added about a 1/2 cup of chicken broth, then 2 tbsp balsamic vinegar.  Then I threw in a wedge of the garlic herb cheese.  It made the most fabulous creamy balsamic sauce that coated the fresh spinach I threw in there later perfectly.  (And incredibly yummy with a little sprinkling of parmesan.)

I microwave ~1 cup frozen vegetables and melt a wedge of laughing cow on top and add other spices to taste (pepper, salt, basil, etc). Nice tasty sauce.

Take one whole-grain Kangaroo pocket and put it in the toaster to get all warm and crispy on the outside. Then put one wedge of laughing cow into the pocket and squish it to spread it out. MMMMMM... it's like a grilled cheese sandwich but with great food value.! I also like it spread on a warm bagel. I think it's best treated like cream cheese spread. :)

I take a cauliflower and par boil it so its very firm still but hot, then drain. I add some can't believe its not butter, some laughing cow wedges and some 1% milk. Toss them all together and put into a glass baking dish which I have lightly sprayed with CBINB and spread out evenly. I sprinkle a small amount of Italian style breadcrumbs (about 2 tablespoons) over the top and about 1 teaspoon of low fat parm--I then sliced two pieces of Kraft fat free cheese slices into 4's and placed them over the entire top- bake in a 375 degree oven uncovered (monitor to make sure it doesn't get too dry)  for about 25 minutes-fabulous and very healthy low cal per serving size  :-)

I spread mine on Melba toast and add on tomatoes and cucumber really thinly sliced,

2 laughing cows + 4 Melba Toast + unlimited cucumber and toms = 200 cals!

Spread it on the Triscuit Crackers Baked Whole Grain Wheat Fire Roasted Tomato and you'll be in heaven
