leftover egg yolks?

is there anything i can do with the leftover egg yolks from recipes that only require the egg whites? i don't want to waste them, but i can't think of anything to do with them. any simple recipes that are also healthy and delicious? thanks :)

You can use them to make hollandaise sauce or mayonnaise, or add them to enrich custard.  However, you will be getting all the calories, fat and cholesterol which you were trying to eliminate by separating the eggs.  Why not just go ahead and eat the whole egg.

It turns out egg yolks are packed with nutrition and there's some question as to the amount it raises blood cholesterol.  I know I have a reference somewhere - stay tuned!
That would kind of defeat the purpose of taking them out. I feel guilty about waste too. You should keep a carton of egg whites around for such recipes. That way, you don't have to worry about waste.
Eggs aren't that expensive, so you aren't wasting that much money, but it never makes me comfortable just throwing away food.  I used to give my leftover egg yolks to my dog.  She loved them!
I just throw them out with the shells.  It shocks my thrifty friends.  As liztj says, eggs are cheap.

I have started eating a maximum of 4 egg yolks a week, mostly for the extra folate they provide.
I finally found that website about  Eggs 
handmade pasta if you don't mind the trouble.
subway, that's a good idea - the extra yolks would be portioned out so you wouldn't get too much in a serving.

feed them to your dog?  it makes their coats nice and smooth.  feed them the egg peel too.  just dont feed them too much, only a few a week.
"Guilt" or "fat" -- which makes you feel worse ... ?
I separate about ten eggs at a time, keeping the yolks in one container and whites in another, for breakfasts (lasts 2-3 days). The yolks I mix with some flour, sugar, milk, melted butter, flavorings, and nuke it all to make a "cake" for my 2 yr old. He loves it and eats some about every third day. Also I am planning to try new recipes like creme brulee or some other custards so my husband can take them in to work for his colleagues.

Eggs are cheap here, but in my home country, a carton of eggs is the equivalent of $30 US. Chicken is also very expensive, and the economy is crumbling because of it, partly due to the H5N1 virus (avian flu) there. This is my personal reason that I can't bear to throw away the yolks. It reminds me to count my blessings.

hey everyone! thanks for all your ideas :) i wasn't planning to eat the egg yolks myself, i just wanted to make something for my friends. so i'm thinking maybe i'll make some creme brulee or custard...
u can use them as facial masks too!
Egg yolks are also really good for conditioning your hair. it makes your hair shiny and super soft. It sounds gross but it works.

If you have dogs or cats, feed them the egg yolk. It's extreamly healthy for them. My dog loves them scrambled and hard boiled, while my cat will only eat the scrambled. I separate my egg white for myself, and save the yolk to cook for them. yes, they are spoiled, but they are helping their 'momma' lose weight. :)
