Using a lemon, honey and mustard glaze, these chicken breasts are transformed into a tangy delight. You can bake, broil, or grill the chicken. Marinade the chicken for 2 hours or more. Here, I grilled them, but if you want to bake them, preheat the oven to 400 degrees. Place chicken breasts in a baking dish and spoon marinade over them. Roast for 25 minutes.
| 16 | ounces chicken breasts, meat only, bone and skin removed |
| 4 | tbsp honey |
| 1/2 | cup lemon juice |
| 1 | tbsp lemon zest |
| 1 | garlic clove, crushed |
| 1 | tbsp Dijon mustard |
| 1 | tsp freshly ground black pepper |
| 2 | tbsp olive oil |
- Combine honey, lemon juice, lemon zest, garlic, mustard, and black pepper in a glass dish.
- Place chicken breasts in marinade, coating both sides with mixture.
- Preheat grill and add olive oil.
- Grill chicken 5 to 6 minutes on each side, or until meat is no longer pink.
