Recipe Ingredients for Lentil Peas Stew

1 cup dried lentils
3/4 cup peas, green
2 tablespoons extra virgin olive oil
1 1/2 cup finely chopped red onion
1 teaspoon garlic powder
14 1/2 ounces diced tomatoes, undrained
6 tablespoons lemon juice
1 tablespoon chopped fresh parsley
1 teaspoon dried mint
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1/8 teaspoon crushed red pepper
1 dash of ground cloves

Recipe Directions for Lentil Peas Stew

  1. first, cook off lentils, rinse and cool

  2. steam peas, cool

  3. heat oil in dutch oven over med hi heat

  4. add onion, saute till limp and translucent add garlic and tomatoes, bring to heat, add lentils, peas and lemon juice and remaining ingredients. cook about 2 minutes more until heated throughout, stirring often
