Lentil Recipies
Does anyone have any really good lentil recipies. Vegetarian please! (My wife, not me!)

Tonight I'm making lentil casserole... I'm just going to combine some raw lentils, water, zucchini, tomatoes, carrots, celery, garlic, and seasonings in a pan, sprinkle some part-skim mozzarella on top, and bake. Very healthy and delicious.
This one is great if you like ginger. Lentils are really easy to cook, you just need to not use too much water (they'll get too soft; start at 2 cups water to 1 cup lentils and add more if you need it) and use plenty of salt (otherwise they taste very bland). They are great with onions and garlic, cumin, coriander and turmeric, and any vegetables you want to throw in as well.
this is a favorite at our house, and my husband is the furthest thing from a vegitarian you'll ever meet!

Got this out of Yoga Journal and everyone loves it (easy to remember too):
1 cup lentils
1 cup rice
1 tsp whole cumin seed
1 tsp whole black mustard seed
1/2 tsp ground turmeric
1 tsp salt
1 tbsp oil
heat the oil, cumin seed and mustard seed over medium until the seeds start to pop. Add the lentils and stir to coat with the oil. Add 3 cups hot water and turmeric, bring to a boil. Cover and simmer on low 20 minutes. Add the rice, salt and 1-2 more cups water, bring back to the boil, cover and simmer on low 15 mintues. You can add more or less water depending on if you want it dry or soupy.
Makes 6 servings, 245 calories and 3 grams of fat per serving. Delicious!
