Does anyone has an easy recipe for them? I bought them because they are high in fiber an protein, but now I don't know what to do with them.
Lentils are really nice with rice. :]
Just put some onion and a bit of ginger and then pour it over the rice.
Try making a dahl with them. BBC Good Food: Makhani dhal - tweak as desired.
They also make a delicious bed for salmon, if you cook the salmon fillet in kitchen foil in the oven atop the lentils (in the same foil) with seasoning of choice.
hi.. I make soup... I start out with a mirepoix base (equal parts onions, carrots and celery finely chopped). In a deep pot, I sauté the onions until translucent and add carrots and celery. While cooking the mirepoix, I clean and wash lentils. I then add the lentils to the pot and then enough water/vegetable stock/chicken stock to cover the lentils and veggies by a good 3 - 4 inches (less water if you like thick soup). I use anywhere from 3/4 to 1 1/2 cup of lentils, and depending on the amount of lentils, I will add either half or a full can of crushed tomatoes (liquid and all) to mix.. I then add a chicken bouillon (or salt if you're veg*n), pepper, and a couple of teaspoons of garam or tandoori masala... I let simmer until it thickens and changes color from red (from tomatoes) to a light golden-brown.
I sometimes add chopped smoked turkey bacon to cook with the mirepoix and add a tablespoon or so of chipotle tabasco sauce.
It should take about 30 minutes or so to cook.. again, it depends on the amounts you use..
You can use them the same way you would any other beans or peas. So in pasta or rice dishes, salads, soups, stews, casseroles, etc. If you want some recipes specific to lentils try going on foodnetwork.com or recipes.com and type "lentil" into a search.
My personal favorite is just a simple Lentil Salad. Cook the lentil until tender, let cool and mix with olive oil, red wine vinegar, chopped onion, cucumber, green/red pepper, and oregano and salt/pepper to taste. Chill and serve. Very tasty and easy to change ingredients to your tastes.

Lentils are a staple in my house and I grew up with them. Sounds like something good to fix for dinner tomorrow. Google it, and I bet you'll come up with some pretty yummy variations besides just boiling them.
just boil kale in it and mix it w/ stir fried peppers and onions... its super easy and tastey
Sautee kale, swiss chard and cavalo nero with eggplant and onion in olive oil. Add minced garlic, chili flakes and a can of lentils to the pan and keep heating. Add salt, soy sauce and top with cheddar.
My mom soaks them in water for about an hour and then boils them with a little salt. Eat with some lettuce ...tastes great.

I sprout them. It's super easy and if you google it, it will give you easy instructions and it only takes a few days. Then you can eat them raw in a salad or steam them or anything else, like soup or with rice.
the red ones cook up in ten minutes..i make a curry lentil soup with celery garlic and onion with a little lime juice curry and cumin black pepper..and serve with cilantro as garnish..sometimes i add veggies like corn peas or carrots.. to make it thicker...its a crowd pleaser....good in the cold winter...
lentils are a great base for veggie burgers... just cook them according to directions and mash them up with cooked onions, mushrooms, spinach.. whatever veggies you want really. Then mix in enough egg whites and bread crumbs to get a pasty consistency that will form balls. You can either pan fry them in cooking spray or bake them in the oven.
A very easy red lentil recipe is Tomato and Lentil Soup... And you can also make a very nice vegetarian pate, Curried Lentil Spread, which is delicious in sandwiches or on hot toast. Green lentils hold their shape better and they make a very tasty Green Lentil Dahl. Green lentils or Puy Lentils are attractive served in a salad such as Lentil and Rice Salad
These are a fun and portable snack!
I love cooking the red ones and mixing in risotto or mashed potatoes! They are also great pureed as a dip for raw veggies (kinda like a hummus without fat!)
The green ones are great for dahl - just boil until mushy and add your favorite spices! I stick to the curry :)
