Okay, so I heard about how great and healthy lentils are so I bought a bag (dry). The problem is... I don't know what in the world to do with them! I'm hoping someone has some yummy recipes to share. Much of my cooking has either a Mexican or Italian slant to it, if that helps...

All those recipes look pretty healthy - and you can always run a recipe analysis to figure out calories etc, and tweak them if needs be.
Lentils are yummy when cooked proper :)
Lentils are easier than most dry beans to cook because they cook more quickly and don't need to be soaked first.
Here are a couple of my favorite recipes
Yum! Those veggie burgers sound good! And I liked that video- his trick of using a wooden spoon and coffee cup to grind spices. Since it's the weekend (and between terms in school!) I actually have time to try these out. I'm excited!

I have a recipe for a meatless meat loaf using lentils that I just love. It's so savory that I don't miss the meat at all.
