Lettuce wraps...yummy
I'm going to make some now with brown rice, black beans, roasted tri-tip and diced tomatos.
Hmmm - I love lettuce boat wraps! Today I wrapped these awesome Applegate Farm Grass-Fed Beef Hot Dogs in lettuce boats with Heinz Sugar-Free Ketchup & Mustard: mm mm good!
I agree--lettuce wraps are a riot...and healthy! When we have them, we will have things like chopped black olives, tuna, nonfat cheese, salsa, sliced mushrooms, diced bell peppers, diced onions, flax seed, sunflower seeds, sliced tomatoes, cooked lean ground beef, diced turkey, lowfat dressing, etc, etc. from which to choose to put in them.
was sad to see them leave the Chili's appetizer menu - they weighed in less calories then items on their light menu but it was my discovery of lettuce as a wrap

Do you just wrap everything in a piece of lettuce? What kind of lettuce works (and tastes) best?
I've only made them a half-dozen times or so, but I have always used ice berg lettuce and only used the outer 5 or 6 larger leaves. They wrap a lot just like a soft taco or any wrap. The left over lettuce I just make a lettuce salad out of. The fun that we had with lettuce wraps is that we had so many different things to choose from--even things like re-fried beans, sliced water chestnuts, cooked red beans with, feta cheese, smoked salmon, etc. We always vary at random what we have available for fillings.

Yep - that's the idea!
Whatever kind of lettuce you personally like the taste of will work, but less crunchy lettuce tends to fold better. I like butter lettuce and the tops of the outer leaves of romaine. Leaf lettuce also works pretty well (again, the tops of the outer leaves tend to be the most flexible). You can also use the crunchy ribs or something like Belgian endive to make lettuce scoops/cups, rather than wraps. Belgian endive in particular makes an elegant presentation.
