Delicious light version of chicken parmesan
| 12 | oz. skinless chicken breast (about 4 breasts) |
| 16 | tomatoes, canned diced |
| 2 | cloves garlic |
| 1 | tsp basil |
| 1 | tsp oregano |
| 1/2 | tsp rosemary |
| 1/4 | tsp salt |
| 1/4 | tsp black pepper |
| 1/3 | cup grated parmesan cheese |
| 1 | tsp flour |
- Preheat oven to 425.
- In a shallow baking dish, place chicken breasts, cut in half and sprinkle with 1 tbspf the parmesan cheese and the flour, and salt and pepper to taste. Bake for 15 minutes, or until starting to brown.
- Meanwhile, in a saucepan, bring tomatoes, garlic and herbs to a boil. Simmer until slightly reduced. Season with salt and pepper.
- Remove chicken from oven and pour sauce over top. Reduce temperature to 360. Bake 15 more minutes.
- Remove chicken from oven and preheat broiler. Sprinkle remaining cheese on top and broil until bubbly.
