Recipe Ingredients for Light Macaroni and Cheese
| 2 1/2 | cups skim milk |
| 1/4 | cup all purpose flour |
| 6 | oz cheese, cheddar, medium, light |
| 2 | oz light cream cheese |
| 6 | cups macaroni |
| 1/2 | tsp mustard powder |
| 1/2 | tsp salt |
| 1/4 | tsp paprika |
| 1/4 | tsp black pepper |
Recipe Directions for Light Macaroni and Cheese
- In medium saucepan, combine the milk and flour until smooth. Cook over medium high heat until mixture is bubbly and thickened, about 7-8 minutes.
- Stir in mustard powder, salt, paprika, pepper and cheeses until cheeses are completely melted. (Optional: stir in 1/4 cup chopped green onion)
- Combine cheese sauce with cooked macaroni. Transfer to a large casserole dish that has been sprayed with non-stick spray.
- Bake at 350 degrees F, uncovered for 30 minutes.
- Serve immediately.
