So for my PB2 lovers I have the perfect low cal yummy dessert for you!
I take:
- 1/2 slice of Ezekiel Bread. Toasted.
- 7 - 8 Tbsp (I know a lot) of PB2
- 1 Tbsp SF Jelly
I put the thick amount of PB2 on the toast and spread it evenly. Then top with the SF Jam. Cut it up into bite size pieces and freeze it for a good 45 minutes (or until completely frozen).
The result is a ~250 cal PB&J frozen treat that you can suck on and let melt in your mouth! Yummy!

You know, I might have to try that. Haha, when I create, it's not usually low calorie. I guess there's this one dip I made...
- 1 tablespoon light cream cheese
- About 1, or 1 1/2 teaspoons honey
- About a quarter teaspoon of cinnamon, or a bit more
Mix it all together. Put it in the fridge for a bit if you want it cold. Changes in the size can be made for however much you want, or for your personal taste preference.
Yum yum, it is delicious. Perfect for an apple or pear.
This is my personal favourite... Rich Chocolate Liqueur Mousse for a microscopic 125 cals a portion
Not a cook so sorry if these seem easy lame but low cal and current favorites for my tight budget.
Not dessert but food creations -
EGG DROP SOUP
2 can chick broth
1 egg
1 &n bsp; eggwhite
1 Tbl cornstarch
Mix cornstarch into a little of the cold chick broth until disolved. Mix that into rest of broth, heat and bring to boil. Slowly drizzle in combined scrambled egg & eggwhite. Egg will become cooked strands in broth. Split into two bowls and serve or refridgerate. If preferred, add soy sauce to taste. 2 servings about 60-80 cal each.
CABBAGE STIR FRY
1 tsp oil
1/2 C onion, sliced
2 C cabbage
1/2 C water (or chick broth)
Garlic powder
Pepper
Heat large skillet. Pour in oil and use pastry brush to spread around skillet. Brown onion. Add cabbage for about 5 minutes stirring. Pour in water and cover, to cook about 5 minutes. Uncover and cook, stirring allowing water to evaporate. Sprinkle with garlic powder and pepper to taste (I use a lot :D).
Also, I sometimes throw in chopped garlic clove with onion when browning if available. Makes a huge plate, no cal count but know its low
MUSHROOM EGGS
2 egg
2 eggwhite
1 C mushrooms, sliced
1/2 C onion, sliced
Spray Pam on pan and heat. Brown onions, add mushrooms, cook until tender. Pour scramble eggs and white over. Can cook like scrambled eggs, omelet or a frittata. Covers a dinner plate and about 265 cal.
My favorite treat (I eat this at least once a day and it keeps me away from all the temtations that come along through out the day) is 1 cup of strawberry halves (49 Calories) & I top them or dip them (depending on how I feel that night) with 1 tub of jello 60 calorie pudding ... I alternate between the choc/vanilla swirl, raspberry/choc, Caramel somthing or other, choc/ banana, Or just plain chocolate. Let me tell you that for 110 calories .. this little treat (and those 40 calorie fudge cycles) are the reason I'm able to stick to calorie counting. If you miss the fealing of chocolate melting on your tongue ... get the plain chocolate and nix the strawberries. Just let it sit there on your tongue ... ok I'm getting too into this now, lol.

Well I am sure everyone does this already, but I just have to rave about my homemade egg muffin (pretty basic!).
I used to CRAVE the sausage mcmuffins from McDonalds, but after knowing how unhealthy they are i won't let myself have them anymore.
This morning I made 1/2 cup of egg beaters (60 calories), and made it into a little mini omelet. Then I toasted a 100 calorie English muffin, put on one piece of American cheese (70 calories), and 2 slices of deli thin 98% fat free ham (17 calories). It was soooooo goood, and soooo filling!!! All for 247 calories!
I'm definitely looking forward to these a couple times per week!
I just had this.....
1 no sugar added fudge bar (40 cal)
1 cup frozen blackberries....
Let them sit about 20 minutes till they start to thaw, and mix them a bit.....OMG!!! YUM
(Wish I thought of it before I ate 3 -100 calorie candy bars...)
For dips with bbq meat or such things I make my own dip.
I have some taziki herbs mix, besically any berb mix with some garlic, onion and some green will do. Then add 2/3 low fat yoghurt and 1/3 mayo (or something like that)
I actually prefer my dips with yoghurt because they taste so much fresher!
Hot V-8 juice. I often microwave a mug of the low sodium variety. It tastes like tomato soup and feels filling for only 30 calories. If I have a rice cake or the like with it, that is still under 100 calories.
My fiance gave me the ice cream maker attachment for my KitchenAid mixer for Christmas last year, and I thought it was going to be the worst thing for my health ... and then I discovered frozen yogurt! As in fat free yogurt, frozen. It's amazing! Really super creamy, and you can tailor the flavor to your own tastes. Here's my favorite recipe:
1 Quart Fat Free Vanilla Yogurt
3 Cups mixed berries (my supermarket sells a smoothie mix with strawberries, blackberries, raspberries and blueberries, but you can use anything)
Blend the berries until they're liquified, then combine them with the vanilla yogurt in the ice cream maker.
And just like that, you're done! So amazingly tasty, and what's better, it's a sweet treat that's healthy enough to have for breakfast. Not that I've, uh, ever done that.
I love salads and was messing around the other day and discovered a salad dressing with zero calories which I adore.
Mix more-or-less equal amounts of Real Lemon and white vinegar, then add a little splenda to taste. Somehow the lemon and vinegar cancel out the bite from either and I really enjoy this.
Ooh, I'll have to try that. I'm a big fan of lime juice as dressing on salads, especially southwest-style salads with a bit of chopped cilantro.
Hi everyone.. All of the recipes look really good! I wanted to share my favorite new lunch:
1 Low carb pita (Joseph's brand with flax) - 60 cal
1 Dr Praeger's Tex Mex veggie burger - 110 cal
30 baby spinach leaves - 5 cal at most
2 Tbs Mediterranean hummus - (Trader Joe's brand is my favorite) - 50-70 cal depending on brand
Cut off the top 1/4 of the pita to make a pocket. Heat the burger in the microwave on high for 1:15 or until warmed through, flipping once. Spread the hummus on the inside of the pita, then place the burger on the hummus. Add spinach liberally.. I try to stuff in about a cup.
I find this delicious, and it's extremely low calorie and low fat, but surprisingly filling! It tastes somewhat like a falafel..
Approx 250 calories per serving... eat 2 if one isn't enough!

i don't eat meat but he said the were yummy and they are much lower cal than those frozen things he normally eats!
I love baby corn sauteed in a little bit of butter with salt and paprika and maybe pepper... a whole can is very low cal and it's a great filling snack!
A friend of mine gave this recipe to me. I don't know where she got it from but it's so good and it's frozen.. Perfect for this time of year
7.5 oz canned pumpkin
1/2 container cool whip free
1/2 package vanilla ff sf jello pudding mix (small package)
1/4 cup grapenuts cereal nuggets
combine pudding, pumpkin, and cool whip in a bowl then add in the grapenuts cereal
spoon into nonstick mini muffin tin and freeze
makes 15 frozen nuggets
cals approx 27 to 30 per nugget according to this recipe.... I did try to put it in the recipe builder but it couldn't find info for the cool whip and the pudding mix..
ok so during the week i let a few bananas ripen really well and then i mash them up with a few splenda packets and cinnamon. then i freeze the mashed mixture.
i use the sugarfree vanilla jello pudding packets and make a modified version of the stuff. it says the use a half cup of skim milk but i usually use a quarter cup of skim and a quarter cup of water.
i use half of the pudding mix and part of the mashed banana mixture chopped up. usually about 50 cal worth of banana and half the pudding mixture has about 25 cal...aka a deliciiouuussss banana pudding mixture for 75 cal. so good...so good.
I have that every morning, but only 1/2 tspn PB, 1/2tspn cream cheese, 1tspn SFJ I make may own bread and PB and Jellies too!!! mmmmm

Like country chicken pie?? then try my tasty low fat, high protien and fiber take on this creamy dish:
Creamy chicken pastry:
3-4 tortillas
flour paste made from 1tablespn plain flour and water.
1x 200gms chicken breast
1cup low fat milk
1tspn mixed dried herbs
1 garlic clove
1Tspn lemon juice
salt and pepper,
1 small onion finely sliced
1/2 cup finly sliced celery and carrots
1/4 cup chopped potatoe (1cm cubes)
1/4 cup chopped butternut pumpkin (1cm cubes)
1 tspn olive oil and/or butter
1tspn flour
1 tbsn finely chopped lean bacon (more if you like but its just for flavour not nutritional value)
1 level Tbsp each of low fat cream cheese and sour cream, greek yogurt also works, but I like the taste of these two combined.
20gms low fat mozzarella cheese cubed 1cm
1 non stick fry pan, good quality that wont stick!, and spatula
Lets get cooking!
1. Marinate chicken in garlic and lemon for 10min in small saucepan.
Add milk and poach for 20min, not boiling, just real low heat, then take off heat and let it sit in the hot milk for 20min, while to do the vege.
2. Sweat of all veges in the non stick pan over med high heat with oil/butter pinch of salt and pepper. Allow it to colour to medium brown, as this is where flavour developes, you want a roast vege kinda look, but not too dark. Takes about 15min. Remove from pan.
3. Take the lovely poached chicken, it should be cooked if not, cook for longer in milk, but dnt boil it! Chop up the chicken or break in to thin pieces.
4. Fry bacon for 1min on med high, add chicken, fry a min, then add half the milk you poached the chicken in, and cook until its ll evaporated (takes about 3-5min) keep stirring,
5. Add veges and flour, cook for 1 min, add rest of milk, and 1/2 cup of water. Now turn heat to low, simmer for 10 min. This is important, you want your root potatoes cooked well. After 10min or so...
6. Mixture should have thickened, should be very thick. Remove from heat, stir in cheeses. and sour cream, salt and pepper to taste
7. Now take a tortilla place a Tbsp or 2 in it carfully. Roll into log shape, now Make a paste out of flour and water to seal all the ends. Dont over fill these things!
8. Brush with olive oil, and cook in non stich fry pan sealed side down turning every min to evenly brown the tortilla, brush with a little extra oil as you go.
9. Serve warm with rocket salad. green lettace leaves and if you like make a fresh tomatoe salsa, they are amazingly tasty and soo good for you!!
Try this TODAY for dinner!! or use left over for healthy lunch!
Also the kids will love it, and its fun to make too
I created a milkshake recipe that is absolutely frothy and delish with only 100 calories! I throw 4 oz of fat free plain greek yogurt (60 cals), a tablespoon of unsweetened hershey's cocoa powder (20 cals), 2 tablespoons of fat free half and half (20 cals), a packet or two of splenda, and a couple ice cubes in the blender and voila! Yummy milkshake with a couple grams of protein as well :)
