So for my PB2 lovers I have the perfect low cal yummy dessert for you!
I take:
- 1/2 slice of Ezekiel Bread. Toasted.
- 7 - 8 Tbsp (I know a lot) of PB2
- 1 Tbsp SF Jelly
I put the thick amount of PB2 on the toast and spread it evenly. Then top with the SF Jam. Cut it up into bite size pieces and freeze it for a good 45 minutes (or until completely frozen).
The result is a ~250 cal PB&J frozen treat that you can suck on and let melt in your mouth! Yummy!

Arugula Sandwich: (160 cals, Grade B-, but that is b/c of the cheese and us girls need our calcium). Spicy mustard and peppery arugula so yummy together. I'm an arugula nut though, I'll even eat it raw and plain like a chip!
Ingredients: 2 slices nature's own double fiber wheat bread 1 slice reduced fat swiss cheese 1 tsp mustard (my favorite is Jack Daniels variety) 3/4 cups arugula
Directions toast the bread, mustard on one side, cheese on the other, melt cheese on bread in microwave for 10-15 seconds to allow arugula to stick.
I discoverd hungry-girl which has a ton of low cal awesome recipes. She (hungry girl-yes its a real person) has a couple of cook books out and you can register to get daily emails from her website. One of the recipes I like is for microwave chocolate cupcakes. I believe it's just 2 TBS chocolate cake mix, 1 TBS fat free vanilla yogurt. Mix together and microwave for like 30 seconds and your done! She has a frosting recipe that goes with it, but I can't remember it. Just go to her website! It's awesome! ![]()
I make this for breakfast sometimes:
- 2 frozen waffles
- 1/2 - 3/4 cup berries (I use a frozen blueberry/raspberry/blackberry blend)
- about 2 tbsp. sugar-free syrup
1. Toast the waffles.
2. In the meantime, heat the syrup and berries over medium-low to medium heat until it gets bubbly.
3. Everything should finish at about the same time...top the waffles with the syrup-berry blend and enjoy!
Depending on the waffles you use, it's about 200-250 calories per serving!
