Lite BBQ Chicken Pizza
My parents own a healthy alternative restaurant, and this is one of my favorite items... This is a thin crust pizza, mind you, and it's about as filling as 1.5 - 2 slices of thick crust BBQ pizza.
1. You're going to use a tortilla wrap as a crust. You can pick which kind, I prefer low carb, or at least whole wheat, and what size.
2. Lay a light coating of BBQ sauce, leaving space on the edges for your crusts. Set some aside and put it in the microwave until it's hot.
3. Cut up some plain chicken, and spread it. Do the same with some mozzarella cheese - we use partially skim cheese.
4. Onions go AMAZING with this pizza. You might want to add some for a serving of vegetables.
5. Bake at about 400 degrees for about 10 minutes. I'm not entirely sure of the numbers on our oven - plus we use a deluxe mega super pizza shop oven - so keep an eye out.
6. Take it out once it's well done enough for you, and dot some more BBQ sauce wherever you'd like.
Enjoy! On a low carb crust, I'd say it's about 500 - 600 calories, but it's so good... quite nutritional... and very filling. A good lunch.
