Looking for Idiot-Proof Recipes

Hi there - I'm looking for some very simple recipes to try out. I've been browsing the recipes and some look good, but I'm looking for inspiration in two areas:

Sandwiches: This is my standard lunch and having an alternative makes me cranky. I use wholemeal bread, and low fat spread, but I'm looking for some ideas beyond ham or meat salad to use!

Meals: This is where the idiot proof bit comes in. I really need some good ideas for meals that aren't too complex (or, as a student, expensive) to make.

NOTE: Please no soup recipes - can't stomach soup!

Do you like Mexican flavors?  If so, this is one of the easiest recipes I know.

Chicken Mexicana

Make it even easier by leaving out the fresh jalapenos - no effort required, just open a jar and a can and dump it all in the pan.

Deviled Eggs 

If you use pimentos from a jar, already minced, it's no work at all.  or, for a change, finely chop a few stuffed olives instead. 

Carrot & Raisin Salad

Since my children made this when they were about 8, I think you can manage it.

Both are Low-Cal, Low Fat, and super easy to make.

Crockpot cooking doesnt get any easier!  Just dump your meat veg n seasoning into the pot before you leave for the day.  Set on low and by the time you get home 8 to 10 hours  later you have dinner already made! Laughing

My family loves stir-fry.  I use a non-stick skillet with a dash of olive oil, heat up some garlic in the oil (I use dried minced garlic that has been reconstituted), some red pepper flakes for those who like spice, then add thinly sliced raw meat and a couple of dashes of soy sauce, maybe some onion powder and/or ginger.  When the meat is done I add frozen stir-fry veggies, maybe some more spices and soy sauce, and cook till warm.  My family doesn't like straight brown rice, so I make a brown/white rice mixture, and we spoon the stir-fry on top of the rice.  You can also buy stir-fry/oriental spice mixes in the spice aisle, but for us the garlic and soy sauce does the job most of the time.

This is really easy, filling, cheap and healthy.  I tend to use whatever I have in the fridge vegetable-wise, to give some variety from the normal packaged stir-fry veggies.
