Heres what I want to do, I am using the mayo to coat potato wedges so that crumbs will stick to it. Then bake the potato wedges in the oven.
I was thinking maybe plain yogurt would work, but I'm not sure how that would taste.
Any advice on the subject would be greatly appreciated.

I've been using fat free sour cream. 2 Tbsp has 25 calories - 0 fat - 45mg sodium - 3g sugar - 2g protein - less than 5mg cholesterol - 4 carbs.
I usually add ground red pepper, paprika, Dijon mustard and 1 or 2 tsp of milk to thin it out just enough to keep it from glopping like a chip dip. Like a thin milkshake.
There're no measured ingredients. You just put as much fat free sour cream as you think will do the job into a bowl and add the flavorings you want. Mix well then dip, dredge and bake.
I use this to coat bone-in skinless chicken thighs with Quaker Quick 1 minute whole grain oats. Works with pork chops also.

I just bought some Kraft Mayo made with Olive Oil. I can't remember the stats exactly, but 2 tbsp was about 50 cal and 4.5 g fat. And the taste is great, exactly like the full fat kind, but with no cholesterol or saturated fat. I can't stand no fat mayo.
I absolutely love this stuff!!! I think it tastes better than the Kraft Real Mayo!!! It's only 45 cals for 2 tbsp!!! I'm not real big on putting a lot of mayo on my sandwiches so I only use about 1 tbsp total...which makes it even better for me...just enough for me to know that it's there. I used this to make a mac salad...and it didn't taste any different, I felt better eating a little bit since I made it with whole wheat pasta and the Kraft Olive Oil Mayo, and light tuna, and pickles...I made sure to squeeze some of the juices out of it so it wouldn't water down the salad. Believe it or not, this salad tastes really good on a sandwich...my boyfriend explored that route...I tasted it and I tend to agree with him!

I just came back from the store with some Kraft mayo with Olive Oil and it tastes great. I haven't tried the Veganaise yet.. so far, this is a great sub for my favorite Hellman's real mayo. I've been depressed ever since I had to give it up. This is a very good sub. Thanks for the tip!
Do not use fat free mayo. It does not taste well.
What you should do is use liquid egg whites to coat the chicken or potatoes. It will not affect the taste.
I use No name light whipped dressing, like the taste better than mayo and there is only 25 calories per tbsp.
I'm not sure how this would work on a baked item, but for a great mayo alternative that is egg free, I love this stuff. It's from a book called Passionate Vegetarian by Crescent Dragonwagon. Yeah, that's her name. Anyway, the flavor is fabulous as is the consistency but you can't leave out the umeboshi paste - you'll find it in the asian section of your health food store. It's a little pricey but it lasts forever in the fridge. The mayo lasts for a week or so but it's only a pint so indulge in some creamy salads while you've got it.
Tofu Mayonnaise:
Ingredients
1 (10½ ounce) box silken tofu, preferably soft, reduced fat
1 Tbsp extra virgin olive oil
½ to 1 heaping tsp Dijon mustard
Juice of one lemon (or 3 Tbsp bottled lemon juice)
1 heaping tsp umeboshi plum paste
½ to 1 tsp sea salt
Several grinds of black pepper
Directions:
- Combine all the ingredients in a food processor and buzz until very smooth. Taste and adjust the seasonings.
- Transfer to a storage container or jar. Use immediately or refrigerate. If water accumulates, drain off.

You can use eggs to make crumbs stick to stuff. My mother makes her home made chicken nuggets like that and they're very nom nom. Non-fat buttermilk works too.
Miracle whip doesn't taste anything like mayo. It's sweet and makes me gag.
OP, try some egg whites to make the crumbs stick.

My little mayo tricks are to add a teaspoon of fresh squeezed lemon juice to each tablespoon of mayo, and to use less than I did before.
Another substitute is Dijonnaise. It's a very light mixture of dijon mustard and mayonnaise, only 5 caloriesin a teaspoon.
Hellman's extra light mayonnaise is pretty tasty as well and only has 12 calories per tablespoon :o)
