Hi clairelaine, I found this and made it the other night. It was out of this world! Soooo gooood!
MARINATED EGGPLANT
INGREDIENTS
METHOD
Combine all, coat with apple cider vinegar and let marinate about two hours before serving. Be careful when choosing eggplants for raw preparation. Ones with a lot of seeds inside tend to be bitter. Remove excess seeds when possible.

- 1 young eggplant, peeled and diced
- Juice of 2 lemons or lime
- 1 med. red onion, chopped
- 1 garlic clove, minced
- 1 red pepper, diced
- 6 large mushrooms, sliced
- 1/4 cup fresh basil, chopped
- 2 T fresh parsley, chopped
- 2 T fresh cilantro chopped

Peruvian Scallop Ceviche
Here is one of my favorite seafood recipes. Pretty easy to make, and very light and summery. Just 222 calories per serving, and a grade A rating too. :-D

Does anyone have a dessert appropriate for a Memorial Day picnic? It should be easy to serve and eat, and not more than 150 calories a serving. Something with strawberries maybe???
I'm also short on appetizer recipes - the key words here are, simple, low calorie.

Here is another grilling idea. It's not an original but I found it in the Kraft food and family magazine. Sounds really good!
Grilled Cheese Topped Tomatoes
4 plum or small vine-ripe tomatoes, cut lengthwise in half 1/4 cup KRAFT Light Zesty Italian Reduced Fat Dressing 1/2 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese 2 Tbsp. KRAFT 100% Grated Parmesan Cheese 1 Tbsp. chopped fresh herbs (basil, chives and/or parsley)
PREHEAT grill to medium-high heat. Place tomatoes, cut-sides up, in greased 8-inch square foil pan. Drizzle with dressing; sprinkle evenly with cheeses. Place pan on grate of grill; close lid. GRILL 10 to 12 min. or until cheeses are melted and bottoms of tomatoes are browned. SPRINKLE with herbs just before serving.
Nutrition (per serving) Calories 80 Total fat 4.5g Saturated fat 2.5g Cholesterol 10mg Sodium 410mg Carbohydrate 4g Dietary fiber 1g Sugars 3g Protein 6g Vitamin A 15%DV Vitamin C 6%DV Calcium 15%DV Iron 0%DV

3 cups farfalle (bow-tie pasta), uncooked 2 cups baby spinach leaves 1 cup KRAFT Natural Mediterranean Style Cheese Crumbles 1 cup cherry tomatoes, halved 3/4 cup drained canned chickpeas (garbanzo beans), rinsed 1/2 cup KRAFT Greek Vinaigrette Dressing
COOK pasta as directed on package; drain. Place in large bowl. ADD remaining ingredients; mix lightly. SERVE immediately or cover and refrigerate until ready to serve. This would be good with some fresh mint leave too!

The Kraft recipes are really good, and I'll probably try them myself, but since they've already been published, we can't use them.

Am a new member here at CC (2 weeks.) Am finding it to be a valuable resource so far.
I love to cook (and of course to eat) so the recipe forum is a great place to get ideas from everyone for healthier alternatives. Lots of great ideas out there. Thanks for your help here on the forums as well. I appreciate it.
Just posted a recipe for Taco Salad, a main dish salad that rates at A- with 279 calories per serving. (Sorry I don't know how to insert a link here yet.) Its a bit high in cholesterol because of the meat, and to control the fat be sure to drain it off well or use ground chicken or turkey instead.
I make the seasoning mix up in advance in larger quantities and keep it on-hand in the cupboard because I love southwestern flavours, and it is easy to control both the spiciness and the salt content if you make your own instead of relying on packets.
I've got a couple more recipes as well... I'll post them when I get a minute
