Looking for a vegetarian recipe - specifics inside

My mom (a vegetarian) is coming for dinner tomorrow (along with 6 other non-vegetarians).

I'm making roladen (rolled up thin beef with pickles, etc) for the meat-eaters, and was thinking about maybe a rolled-up eggplant slice thingy for my mom.

Do any of you have an idea for what I could make for her? Doesn't have to be eggplant...

Does it have to be a roll?  Vegan manicoti is good.

veggie lasagna, and it's one of those things meat eaters can eat too! 

 i'm sure you can find a great recipe on line, i make mine pretty simple just sub some veggies in for the meat layer!  (not a vegan, so i use regular ricotta and mozzarella cheese).... typically i use spinach, broccoli, shredded carrots, mushrooms... spinache is usually the staple, but you can use whatever mixture you want.

 and eggplant parm is always good too
