Love Mashed Potatoes but hate the fat and calories??
Hey everyone. I am new here, so I decided to just jump in and share a little secret that I discovered while doing Atkins 2 years ago. I myself love the whole meat and potato kinda meal. On atkins carb=bad, so me and my husband found the perfect alternative. Cauliflower. I would never eat the stuff before but we decided to give it a try. You cook the cauliflower, you know water, steam, cook, however you want to. Then mash, and whip it. Put a dallop of lite sour cream, another dallop of lite mayo, a little S & P and you're good to go. Mix it all together very very well and it actually looks like wet mashed pots. Tastes very good too. We had some tonite. I can't do the atkins diet because it screws with my mind and body, but I am on a low calorie diet and I love it. Hope this helps some of you that are really craving meat and potatoes. It is very good I promise.

Guess what I had for dinner on Monday? I love mashed cauliflower. It was on sale for $1.29 a head, so I got the biggest one I could find. There's some leftover too! Doesn't it feel good to have all you want of something yummy and good for you?
Oh wow, it sounds so good :)) I've given up mashed potato fpr months!! Lol, i'll try this new recipe :)) Do u know how many calories are there in a serving?
I tried a recipe (that I slightly modified) from Rachel Ray's 30minute show for dinner last night. It is a pasta sauce made from mashed cauliflour. I basically just steamed the chopped up head, added garlic and onions and some nonfat plain yogurt. Served the whole mess over whole grain pasta. Really good stuff. Even the hubby liked it.

2 tbsp lite sour cream &nbs p; & nbsp; &nbs p; & nbsp; &nbs p; & nbsp; 30 calories

The best way I have found to make good low cal mashed potatoes is to use the Fat Free Creamer instead of milk or cream and to add only a bit of butter. They will mash up light and fluffy and only 10 calories per TBSP. of creamer.
I did mine with 1/2 teaspoon of olive oil per serving, garlic and parmesan cheese sprinkled over (a teaspoon on the whole batch).
