Seriously, this is a great website--101 Cookbooks.  She has beautiful, delicious (and usually very healthy!) recipes.  Many are quick and easy to whip up: I've made many a thing and have yet to be disappointed with her suggestions.  If you are trying to eat more vegetables, contemplating becoming a vegetarian, or just want something different, check out her site--her recipes tend to be whole-grain and vegetarian.

Who else out there is a fan?

ME!  She is from my hometown (San Francisco) and I've been reading her blog for a couple years now.  Lovely recipes and pictures, have you tried her power bars yet?  She made a little video on how to cook them too!
I've been meaning to make those--they look wonderful.  I have most of the ingredients, I just need to find the rest...  I even put them in here to see what the calories are on them!  I'm guessing they are pretty yummy?

Me too! I made the Baked Artichoke Dip (with tofu and I used soy yogurt) and took it to a party. Everyone liked it and I slowly let out the secret that it has tofu in it.  I gave the recipe to two people there.

Everything on her site is pretty great. And the Recipe Analyzer says most of the stuff Ive put in so far is excellent for you.
