You can make this more low cal/low fat, by using turkey bacon
| 8 | ounces dried Great Northern beans |
| 4 | cups chicken broth |
| 2 | slices bacon |
| 1 | cup minced onion |
| 2 | stalks celery, minced |
| 4 | cloves garlic, minced |
| 1 | bay leaf |
| 1 | teaspoon lemon juice |
| 1 | pepper, to taste |
| 1 | salt, to taste |
- soak dry beans over night, or use canned beans
- Fry bacon in Dutch oven
- add onion, celery and garlic until tender
- add chicken broth and beans and bay leaf
- bring to boil
- simmer until tender
- add 1 tsp lemon juice/ salt and pepper to taste
